The first coffee was roasted in Sun Prairie in 1885. The town got its start as a railroad town and started trading goods with other towns in Michigan and Illinois. In 1912, Sun Prairie established its own post office which remains in operation to this day. The town's mill was built in 1893 and it still flourishes today, producing many types of products like breads, pasta sauces, etc.
Sun Prairie is a town in the U.S. state of Wisconsin, located in the Driftless Zone of the Great Lakes region. The population was 7,846 at the 2010 census. Sun Prairie is home to the University of Wisconsin–Sun Prairie and its agricultural research center, which conducts research on maize, beans, wheat, sorghum, cotton and other crops. The first Europeans to visit Sun Prairie were French fur traders in 1636. A band of Seneca people had been living there for over two centuries by 1785 when they were driven out by white settlers and their dogs. In 1854, James Wilkinson built a small log cabin near where Sun Prairie now stands on land he had purchased from John Dearborn for $200 (). Wilkinson named his cabin "Sun Prairie". He also started a sawmill and gristmill in town while he awaited construction of a new school building that would be funded by donations from local farmers. When it became clear that the new school would not be built until after World War II (due to federal funding shortages), Wilkinson donated his mill equipment and land to the University of Wisconsin–Sun Prairie as part of a gift given during World War II . The university has used Wilkinson's equipment ever since to develop agricultural research programs in Sun Prairie. In 1886, three brothers—Edmund Crouch III (1848-1911), Charles Crouch IV (1860-1930) and John Hodge (1860-1945)—founded what is now known as The New England Cotton Company Ltd., which was one of America's largest cotton production companies during its heyday from 1916 through 1934 . After selling their business into bankruptcy in 1934, these brothers founded what is now known as International Harvester Incorporated . In 1949, International Harvester merged with Monsanto Company to form Monsanto/International Harvester Corporation . In 1984, Monsanto/International Harvester Corporation merged with United States Steel Corporation to form United States Steel & Mills Corporation . Today Sun Prairie is home to both The University of Wisconsin–Sun Prairie and Monsanto/International Harvester Corporate Headquarters ). Dedicated on July 11th off S Highway 12 south are two Pioneer Cabin Sites – “Pioneer Cabin No 1” which was erected circa 1800s and still extant today; “Pioneer Cabin No 2” was erected approximately 1830s but no longer extant

In 1905, Sun Prairie became an incorporated village and remained so until its incorporation into a town by ordinance in 1968. As one of America's "rusty old time" towns, Sun Prairie features many familiar landmark buildings dating back to its early days such as the Pioneer Courthouse (1847), Wagon Wheel Inn (1860), Methodist Meeting House (1905), Judge John Ladd's Court House (1866), and SUNPRAIRIE FARM No. 2 Mfg Co.'s Cheese Factory (1920). In addition to its downtown core, which includes several businesses and services including a library and hospital, Sun Prairie has several scattered rural areas located throughout its landscape: farms with rolling hillsides separating them from downtown; country lanes lined with apple orchards; meadows; rivers; woodlands."
The Sun Prairie area was first settled by German settlers in 1847. The town of Sun Prairie was founded on May 3, 1847, by Wilhelm Heintzeler and his family. The town was named for the sun that can be seen from atop Mount Herberts in northern Wisconsin. In 1854, the town of Sun Prairie became a city and it has remained that way ever since. In 1912, the city of Sun Prairie annexed the neighboring towns of Menomonee Falls and Hennepin County.
