The origins of Camas Coffee can be traced back to 1852 when Don John Nicholson founded a small farm near present-day Camas. Don John's beliefs about quality, flavor, and sustainability led him to discover and cultivate premium quality beans himself. In 1960, Don John's son, Roy Nicholson took over operation of the business from his father. Roy continued father's legacy by becoming an advocate for sustainable practices within the industry. Today, Roy Nicholson's grandson, Kirk Nicholson runs Camas Coffee with his wife Karen. Kirk has been running the company since 2006 and is dedicated to creating high-quality coffees that are sourced sustainably from local growers and processors across America. Along with his wife Karen, Kirk takes pride in ensuring that all of their coffees are roasted daily on site using only optimal grades of beans for maximum flavor expression.

Camas, Washington is a town in King County, Washington, United States. The population was 1,949 at the 2010 census. Camas is located on the eastern edge of the Yakima Valley and west of Seattle. The town is named after Captain John Campbell who fought in the Puget Sound battle of 1792. The first permanent settler in what is now Camas was John Holmwood who arrived in 1853. By 1860 there were twelve families living here. In 1876 a group of miners from Oregon decided to settle in this area and platted an villages called Grantville and Hermitage near present-day Camas. In 1886 camels were brought into the area to graze land and so began Camas' horse culture which continues to this day as a major industry. In 1905 Camas became part of King County and then annexed by Bellevue when that city became large enough. The annexation led to some tension between Bellevue's rural residents who wanted more farmland for their horses while Camas' wealthier citizens favored keeping its small town feel despite having access to all sorts of services from Bellevue's larger neighbor. Ultimately, Camas voted against annexation and continue to operate as a separate municipality until it merged with Everett in 1965. This allowed people living near Java to buy fresh beans direct from the Indonesian plantation where they were ground into coffee.

The Camas area of Washington was first settled by the peoples of the Columbia Plateau in the late 18th century. The area now known as Camas was part of what is now Oregon and California before they were united as a United States territory in 1861. The first permanent settler in this area, John Day, arrived in 1824. By 1860, there were over twenty families living in and around present-day Camas. In 1876, a group of men from British Columbia led by George Hildebrandt came to Camas to prospect for gold. They found some surface gold but no underground workings could be discovered. After two years of exploration, the men returned home empty-handed. This event helped lead to development aroundCamas Falls and later at Sprague Dam. Camas was founded in 1853 by John C. Fremont and his brother, George Washington Fremont. The valley became a lumber town and the first post office was established in 1856. A sawmill, gristmill, hotel, and school were built in Camas between 1857 and 1861. In 1865, the Camas Valley Railroad was incorporated and it served as a transportation artery for the region until it was closed in 1933. In 1959, Camas voters passed an ordinance annexing .5 square miles of land to the city limits making Camas the second largest city in Washington state after Seattle.
