However, over time, Gourmet Coffee became a well-known and respected café for its delicious cup of espresso. The first wave of Italian immigrants who arrived in America during the 1800s brought with them their love of food and coffee. As they settled down in what is now Payson, Utah, they opened their own restaurants that specialized in fresh made pasta dishes and home brewed espresso drinks. These Italians were some of the first to bring their fine cuisine to America and they also helped start the trend that we know today: gourmet coffee shops. One such restaurant was La Caffèria where owner Angelo Zingales imported beans from Italy himself. From here, he started to sell his unique espresso drinks which quickly gained popularity among American locals. In addition, he also developed a reputation for being one of the best roasters in town. This experience led him to open his own business called Zingales’ Coffee & Tea Emporium which would continue serving up great Italian styled espresso drinks until it closed its doors in 2006. However, despite La Caffèria’s closure, Zingales’ legacy lives on through his current café – Gourmet Coffee – located on Main Street in Payson today! In 1916, the first coffee cooperative opened in Payson and continued to operate until it disbanded in 1954. The second coffee shop to open in Payson was called the Western Pacific Coffee Company and operated from 1916-1918. It is also documented that this store had a café that served food as well as coffee. On July 1, 1949, the first grocery store opened in Payson when The Gourmet Shop Incorporated moved from Salt Lake City, UT to start up their own grocery store at 316 S Main Street. This business continued operating until it folded on December 3rd of that year. It is recorded that early on they sold pre-packaged groceries such as cheese and eggs as well as fresh produce like tomatoes and lettuces; however, by 1957 they had turned their focus towards selling prepared foods only.

Coffee has been used as a ceremonial drink throughout history; for example, Emperor Qin Shi Huang drank green java during his coronation ceremony! Coffee is also enjoyed as a regular beverage world-wide; for example, more than one billion cups of brewed espresso are sold every day!
