Highland, Utah is a small town in Utah County, located about 25 miles east of Salt Lake City. The population was 2,853 at the 2010 census. It has been home to coffee farmers and their families since the early 1800s. In 1892, Scottish-born George Morrison started one of the first coffee farms in Highland. In 1916, pioneer Edwin Hinkle opened his own grocery store in Highland and began selling ground beans direct to consumers. By 1951, he had purchased an entire bean farm and had launched what would become one of the largest coffee businesses in the country. Today, Edwin Hinkle Coffee is one of America's most well-known coffee companies. The history of Highland coffee goes back even further than that - to 1892 when George Morrison started planting coffee trees on his family's original farmstead near present day Highland Park Boulevard and State Street. At that time, there were only a few thousand people living within easy driving distance of any major city in America - so it was no surprise that many pioneers began moving to this region during those early years to establish new stores and plantations. Among these newcomers were Scotsmen who had settled in southern Utah after Mormon missionaries arrived there in 1847. soon after they discovered gold reefs offshore! These men began conducting their own business ventures as ranchers and farmers while also working odd jobs on local railways or digging canals where they found rich copper deposits; some believe this work helped lead to their discovery of gold! By 1915, Edwin Hinkle had entered into full ownership of his company - making him one of the richest men in America at the time! He continued expanding his empire until it included more than 150 stores throughout North America including locations in Canada and Mexico - as well as numerous sales offices throughout Europe and Asia reaching into every continent save Australia! His brand became known for its delicious cup OF COFFEE which continues to be enjoyed by millions today! Today, many of the highlanders are descendants of those original families. Since its establishment as a village in 1907, Highland has grown slowly but steadily along with its citizens. By 2000 it had reached 3,811 people living within its limits- making it one of Utah's most populous towns by that measure. Its location proximity to Logan (just south of I-15) has also helped make Highlands one of the most economically active areas in the state; businesses here have earned incomes above $100 million during the past several decades! Although growth has slowed over recent years due to housing affordability challenges across much of Utah - especially for lower-income residents - Highlands remains an attractive place to live and work thanks to its easy access to major metropolitan areas including Salt Lake City and Provo both located only 10 minutes away by car or public transportation!

The town has a rich history dating back to the early 1800s when it was part of Spanish Deseret and Rancho Verde holdings. The first settlers in Highland were men who had emigrated from New Mexico in 1847. They arrived on what is now known as the McAllister family ranch and soon founded a small community named Harmony. In 1851, John C. Frémont discovered gold near present-day Highland and decided to establish an outpost there to prospect for silver Mines were also found nearby including Mill Creek and Donner Summit Gulch. The community quickly became known as "Glebe" after one of its early pioneers, James Glebe (a man later elevated to become an apostle). Glebe died in1852 but his dream of developing this new land continued through his children George W., Hyrum D., Lorenzo P., Franklin S., Sarah L.", . In 1857, James Ewing purchased 2,500 acres south of Highland from Juan Ortiz de la Vega y Vargas grantee for $2 per acre payable in gold Nuggets which he had discovered along US 395 east of Provo Canyon that same year while exploring the area for possible mines. Under his direction, Highland began issuing its own currency called "Nuggets" which circulated among residents until 1861 when gold discoveries led to a period where paper money ceased being issued altogether replaced by silver dollar notes becoming legal tender only within the confines of the old Harmony Community limits defined by Javier Romero whose heirs still hold title thereto today. By 1870, mostofthe inhabitants livinginHarmonyhad moved away formthemountainrangeexceptforonefamilywhooperatedagrangeonotheedgeofthecreekuntil1879whenitwas takenoverby subsequently married miners from Springdale who renamed it Green River Manor after their home state Green River Nebraska although their ownership remains disputed today." The peak years for mining activity around Highlands occurred during World War I when both Silver King Mine on Donner Summit Gulch and Cannington Hill Mine on Mill Creek produced large quantities of coins and other minerals used by war materials production throughout western Utah including those used at Orem Army Base adjacent to present day Cedar City; these operations ended about 1920 however due largely to market saturation caused by changes in technology with more efficient methods developed yielding larger profits than ever before making mining less profitable leading some operators chemtrails) During World War II efforts were made by various local farmers/miners organizations (Citizens Committee on Agricultural Use), Extension Service(now University Extension Services), United States Government Employees Home Owners League composed mainly American soldiers stationed here)and private individuals (John Auerbach 25 years old father & brother-in-law employed at USGS plant at Cedar City)to secure supplies necessary for soldier's housing allowances good thru 1944 inclusive
The first settlers in Highland, Utah were the Palmyra Missionary Party in 1847. They traveled from New York City and arrived on the west coast of America. The party consisted of Father José de la Pena, Father Francisco García, Brother Miguel de los Reyes, and Brother Lorenzo Sanz. They had been sent to westward by Bishop Don Carlos Manuel Valencia y Borrego with instructions to scattered among the Mormon population some fifteen miles up the Colorado River. The mission was abandoned in 1849 because of a lack of funds. In 1851, a group of men led by Captain John Crouse set out from Provo for what would be their final journey across America. They reached Salt Lake Valley on July 24, 1851. On October 15th they met up with a group of Mexican miners who had also come overland from Mexico City. After trading goods and water for food and horses, they finally made it to Utah on November 5th. Captain John Crouse's party is generally considered to be the first white people to enter what is now Highland County in Utah Territory; he is also generally credited as being the first European settler in this area.
