Cottonwood Heights is a small town in the Cottonwood Heights Borough of Logan, Utah. It was founded in 1875 by Mormon pioneers and remains an agricultural community with a large coffee plantation. The first coffee beans were roasted on the homestead of John D. Lee in 1876. The town got its name from the cottonwoods that lined the streets. The coffee industry began to grow rapidly in Cottonwood Heights during World War II due to the demand for fuel wood by the military and because of increasing population density. In 1945, Coffee Bean & Tea Leaf (CB&T) became the first company to open up a store in Cottonwood Heights and continue to serve local customers until 2001 when they merged with Peet's Coffee Co., Inc.. Today, CB&T operates as an independent business with over 150 employees including roasters, beanters, shipping drivers, and accountants. Their goal is always to provide their customers with high-quality products at competitive prices while keeping their shop operational at all times.

The townsite was laid out by Brigham Young and his fellow Mormons who were following the wagon train route from Missouri to Utah. The name Cottonwood Heights came about because of the wood that grew abundantly there. Cottonwood trees are still seen throughout the community today. In 1907, when Cottonwood Heights was founded, it was one of only two settlements on what would become known as Route 66. The other settlement was Promontory City, which had been built earlier on what is now Interstate 15. Mormon pioneers traveled along Route 66 to find new land for their religion and their families. Route 66 originally ran through southern Utah, but it soon became popular with travelers looking for a shortcut to eastern Oregon or California. In 1926, when Route 66 was widened into an interstate highway system, Cottonwood Heights became one of its first destinations. With its convenient location near Interstate 20 and Highway 11A, Cottonwood Heights quickly became known as a tourist destination for those traveling down Route66 between Provo and Orem. This growth led to increased traffic congestion on roads leading into town – which in turn caused traffic jams on local streets where people could buy groceries or take public transportation to get back home after visiting attractions within town limits
