Cedar City is home to the Cedar City Coffee Company, founded in 1892 by Edward C. Smith and his sons Prentice and Charles. The company was one of the first coffee companies in Utah and its beans are still roasted here today. Over the years, Cedar City Coffee has attracted a loyal following for its delicious cup of coffee. The origins of the Cedar City Coffee Company can be traced back to 1892 when two men named Edward C. Smith and Prentice Heiser began trading coffee from their farmstead in what is now known as Cedar City, UT. At first, they only roast their own beans, but soon began selling products such as espresso machines and grinders online as well. In 1916, Edward C. Smith passed away and his sons Prentice and Charles took over running the company until their deaths in 1978 and 1984 respectively. Today, the company continues to operate under multiple names including Cedar City Coffee Co., Edwards Coffee & Tea Co., First National Coffee Inc., National Brewing Corporation (NBC), Utah State University's Staley Cafeteria Cafeteria (now closed), Utah's oldest commercial grocery store - The Gourd House - as well as various cafes throughout downtown Cedar city! Cedar City, Utah is a city in Cedar County, Utah, United States. The population was 11,834 at the 2010 census. It is the county seat of Cedar County and home to the Cedar City Air Force Base. The first permanent settler in what is now Cedar City was James Waddell in 1847. He named his new community after the cedar tree that he found near his farmstead on the banks of the Jordan River. By 1850, there were over 20 families living in Cedar City when it was incorporated as a town by Brigham Young and others during an abortive attempt to colonize what would later become Salt Lake Valley. In 1860, Cedar City became an army post under US Army General George Aiken during the American Civil War. After Confederate forces retreated from northern Utah following their defeat at Mountain Meadows (near present-day Provo), General Aiken's troops moved into Cedar City and arrested many of its residents who had fled to Salt Lake Valley before battle began; this event is generally regarded as one of the early steps in establishing Mormon settlement hereabouts. In 1875, Congress passed legislation appropriating $10,000 for building a new courthouse and jail in Sandy – taking advantage of President Fillmore's signing statement promising "to erect no less than two good brick buildings" within five years – which resulted in construction of both structures soon afterwards. The cornerstone for courthouse #1 was laid on July 4th, 1876 by Mayor John Crouch; however due to waterlogging conditions on account of high rains occurring just prior to dedication ceremonies (see photos), only part of courthouse #1 was completed until 1886 when additional funds enabled completion of all but one corner section thereof.
