In 2013, a new company called Blue Bottle Coffee began serving fresh roasted coffee from an old processing plant that had been used for several years for storage purposes. Blue Bottle is one of only a few companies that continue to roast their own beans and sell them directly to consumers across the United States.

In August 2009, Lone Star College announced that they would close their original campus in Weslaco due to low enrollment levels and numerous other requests from students and staff alike for more space on campus. However, the college has since reopened on an adjacent site with more than doubling its current enrollment - now boasting over 2,000 students! In July 2013, it was announced plans by Mayor Acevedo to build a water park and hotel near Interstate 10 Exit 281B in downtown Weslaco as part of his plan to improve economic opportunities for the town. The project stalled when state funding dried up but has been revived as of October 2017 after state legislators awarded $10 million towards the development project
