It has been said that the first coffee beans were roasted in what is now Victoria, Texas, in 1851. The city was named for General Edward H. Austin who fought in the Mexican-American War and later served as governor of Texas. Coffee became popularized in Texas after it was discovered by Antonio Lopez de Santa Anna while he was serving as its president. He brought coffee plants back to Mexico City and began exporting them to Europe. In 1853, a man by the name of David White purchased some of Santa Anna's coffee beans and started roasting them himself in a small room on Houston Street in downtown Victoria. The first batch of coffee beans from White sold for $2 per pound when they were first released into the market. From that point on, gourmet coffee began being produced throughout the Lone Star State. In 1862, John Ayer bought some of White's beans and started roasting them at his home on Elm Street in Victoria. After two years of production, Ayer moved his business to an old mill on Mud Bayou where he continued roasting his own beans until 1865 when he died aged 74 years old.
