Sweetwater coffee began as a small town in the Texas Hill Country. In the early 1800s, farmers and cattle ranchers brought beans from Mexico to sell in Sweetwater. The first coffee shop opened in 1851, and it was known as the Coffee House. The store was open every day of the week, and customers could buy coffee, milk, eggs, breadwinner’s breakfast (a type of oatmeal), or lunch pails. In 1863, Sweetwater became an independent city and its first mayor was Hiram Powers. From 1865 to 1867,Sweetwater hosted the annual Western States Fair which showcased American agriculture and industry. One of the features of this fair was the Coffee Cup Challenge where merchants competed to create a cup of coffee that would be judged on its taste and appearance. The city experienced another period of growth during World War II when it became home to Fort Worth Army Air Base. During this time, Sweetwater developed into a significant commercial center for military spending within Fort Worth County and throughout Texas. With increased population density and growing economic opportunities came increasing levels of traffic congestion on I-30 through Sweetwater – one factor that led to the development of new shopping districts such as North Central District and University Place while also promoting civic involvement by creating parks and playgrounds in downtown areas. Since 2000, Sweetwater has been home to two larger artisanal coffee roasters: Roastery Rd & Roper's Coffee & Cafe (the two remaining independents). Roastery Rd is located on Main Street between US Highway 287/I-30Wand Main Street Elementary School; Roper's Coffee & Cafe is located at 4500 Elm St., Suite 1017 in North Central District (just east of University Place). These two roasters have gained national attention for their unique flavors – Beignets with Swiss Chocolate Cake batter at Roastery Rd., Dirty Deeds Done Dirt Cheap Electric Kettle Blonde at Roper's – all made with organic grounds sourced from local farms near each location; both cafes offer free wifi access!

A few individuals who made a significant impact on the development of artisan coffee are Auguste Escoffier, Roberto Martin and Frank Gehry. These individuals believed that quality should be considered when purchasing coffee, and approached their work with a degree of care. One of the first commercially successful artisanal roasts was made by Roberto Martin in 1961. The roast was designed to be smooth, full-bodied and flavorful without being too bitter or acidic. This roast has been replicated numerous times throughout the years and is still one of the most popular types available today. Another early pioneer in this field was Auguste Escoffier. He is known for his unique style of cooking which combines freshness and flavor with a sense of orderliness and organization. His bouillon cubes, French press machines and other vessels were used to produce some of the world's first artisanal coffees. Frank Gehry is also considered an Altman Pioneer in Coffee Artisanism. His methodical approach to designing products has influenced many subsequent commercial brewers as well as home brewers across the globe. Gehry's techniques focus on using natural materials such as wood, brass and steel to create beautiful objects that taste great too.

The old high school (now called Alamo High School) was demolished in 1970 and replaced by a new one. A few years later, sweet water creek won an award from the American River Water Quality Control Commission for being among the cleanest creeks in Texas.
