Paris, Texas is a small town in Williamson County, Texas. The population was 1,929 at the 2010 census. It is part of the Austin-Round Rock metropolitan area. The coffee industry began in Paris in 1875 when a man named W H Gassaway started roasting beans on his farm. In 1927, Richard Schlumberger founded Schlumberger Coffee Roasters and remains its owner to this day. One of Schlumberger's early trademarks was their "French press" coffee which used a French press to create a smooth cup of coffee that appealed to many consumers.
