The company produced its first cup of coffee in 1916 and continued to produce fresh beans until the early 2000s. The Lewis family was instrumental in developing small batch coffee as a mainstay at their business. John Lewis worked at various mills before starting his own mill in 1915. He pioneered the use of locally sourced beans and helped develop the process of roasting beans onsite. Myrtle Lewis followed her father into the coffee business, starting her own mill in 1922. She also played an important role in developing the flavor profile of small batch coffee. Today, there are several legacy businesses that continue to produce high-quality smallbatch coffee. He set up a farm on the north side of town and named it after his daughter Leone (Linda). Today’s Leon Valley contains some of the oldest buildings in Wise County dating back to pioneer days such as the Fenton House which was built in 1892. Other notable landmarks include: Summit Hill Cemetery which dates back to 1881; Cloister Road Methodist Church which was built in 1914; and Lumber & Hardware Company building which was constructed in 1923-24 by local businessman Wm Hargrave. Recently there has been much development taking place around town with new restaurants, shops, apartments etc., making it one of the most lively communities you will ever visit!

The community has been home to a number of businesses since its inception including farm produce store (1951), grocery (1963), cattle ranch (1973), bakery (1981), feed mill (1991) and water treatment plant (2001).
In 1839, the Republic of Texas was founded and Leon Valley became part of the new state. The town was named for James Fenton, a U.S. congressman from Texas who served in Congress from 1837 to 1840.
