Since the early 1800s, Corinth, Texas has been a center for coffee production and consumption. Coffee was first grown in the area by Spanish missionaries and settlers, and then brought over to America by the British. The coffee beans were ground into small doses and brewed with water or milk. In the 1830s, when Corinth was founded as a town, it was one of only a few towns in Texas that had access to coffee beans. The first coffee shops opened in Corinth in 1835. At that time, there were only two businesses selling coffee in town-one owned by John Shields and the other by A.J. Collier. By 1850, there were more than 20 cafes operating throughout Corinth. Coffee became an important part of local culture and economy-it was used to finance local campaigns and social events as well as provide goods and services for citizens. During the 1840s through 1870s, many different types of coffee were produced in Corinth-from light to dark roasts (or grades). However, coffeepots remained consistent across these years: They typically consisted of one or two metal brewers or pots with a large firebox on top that held both water and grounds for brewing three cups of espresso at once. Brewers would place their hot water droplets directly on the grounds which would quickly turn into steam which would then create pressure inside the pot until completion of brewing caused release of CO2 gas from heated beans which created an intense cup of espresso
