In the early 1960s, Vernon and his wife Gertrude started the first small batch café in Copperas Cove. The café served fresh brewed coffee from their farmstead espresso machine. The late 1970s saw the arrival of Donny McNaught as owner of McNaught's Coffee & Cafe. In the early 1980s, Donny decided to open his own small batch café in Copperas Cove. The McNaughts continued to operate their small batch café until 2000 when they sold it to John and Denise Sheppard who ran it until 2006 when they bought out by new owners, Gary and Kim Kiesler. At present, the Kieslers continue to run the business as co-owners with Gary working part time while he attends college full time. In 2007, Gary introduced a new strain of coffee called Bourbon County Coffee which is unique to Copperas Cove. The Kieslers continue to roast and sell Bourbon County Coffee both at their store and online. Copperas Cove Coffee was first started in 2002 by two friends, John and Karin. The coffee is roasted on a small scale in their garage and hand-poured into small cups with fresh cream. Today Copperas Cove Coffee has six employees and three locations in the Richardson area of Texas.
Copperas Cove is a small town located in Harris County, Texas, United States. The population was 1,890 at the 2010 census. It is part of the Houston-The Woodlands-Sugar Land metropolitan area. The community name has been derived from two words: "copper" and " Cove." Copperas Cove is located on the Gulf of Mexico about 12 miles (19 km) northeast of Sugar Land and 15 miles (24 km) south of Houston. The cove is also known for its crystal clear waters and fine white sand beaches which are popular with swimming, sunbathing, fishing and snorkeling. The first settler in what would become Copperas Cove was John Fenton who arrived in 1848. He leased land from the Mexican government for £10 per acre (1/4 dollar). He built a cabin on a bluff overlooking the water. By 1851, other settlers had followed Fenton to his property including A.J. Browning who established an agricultural colony near present day Crosby Bayou with 5 farms named after himself - Browning's Bayou, Brazos Bayou, GourdBayou, bayous de l'Acres et du Laxon - each with 6 acres (2 ha) or more of fertile soil and 30 head of cattle or pigs per farm animal (). In 1863 he sold his holdings to James Ewing who founded Rice Village (). Rice Village became Copperas Cove when it was annexed by Houston in 1895 following an election contest that saw majority voter approval for annexation as part of the effort to annex allHouston suburbs() In 1905 copper mining began operations on nearby Clear Fork creek where solid copper ore was discoveredbearing a grade of over 2%. Mining continued until 1962 when production stopped due to low gold content in the ore veins and high operating costs associated with new technologies available at that time(). The town will officially be renamed Copperas Cove on July 7th 2020 during mayor Proctor’s proclamation recognizing June 24th as “Copperas Cove Day†after local citizens organized a fund drive to purchase village green land adjacent to city hall for park purposes ().

In the early 1960s, Copperas Cove began to experience rapid population growth due to the influx of students from across Texas who were attending college near Corpus Christi. By 1970, Copperas Cove had reached its current size with over 1,000 residents. Since then, the town has experienced significant economic development including several expansions into new neighborhoods such as Winter Haven and Sugar Land. Today, Copperas Cove is an important community with a rich history that offers visitors a unique perspective on Texas history and culture.
