In the early 1800s, Colleyville was a small farming community located in present-day Dallas County. The town was founded by John S. Colley and his wife, Sarah, in 1821. The couple set up a farm on the edge of town, and from that point on, Colleyville grew rapidly as a coffee growing center. By 1830, the population of Colleyville had reached 100 individuals, and by 1840 it had increased to 300. In 1846, John A. Callahan arrived in Colleyville from Illinois with plans to start a coffee plantation here. He soon realized that there were too few trees suitable for coffee production in Texas at that time, so he decided to move his plantation eastward to Bowie County instead. Coffee became an important part of Texas culture during this time period and remains an important commodity today. It quickly became apparent that coffee beans could only be grown under high pressure conditions – near or above atmospheric pressure – which made it impossible for other crops to compete. This caused Coffee pioneer John A. Callahan to abandon his Bowie County plantation in 1848 and return home to start anew on his new one-acre plot near Colleyville (now part of Arlington). The first Starbucks opened its doors in Seattle in 1976; today more than 20 countries worldwide serve up their delicious cup of Joe!
