Canyon’s first coffee crop was planted in 1916 and it has continued to be grown and roasted here ever since. The region has a rich history with regard to coffee, going back to before Spanish explorers even set foot in what is now Texas. Some of the earliest evidence of coffee growing comes from Potosi, Mexico where an Aztec priest learned about beans from traders travelling through the area. The first time that Canyon tasted its own cup of espresso was on October 12th, 1912. At that time, Italian immigrants Angelo and Giovanni Giolito founded their own roastery in Rincon de Dios (now part of Canyon). They started using indigenous strains of beans (including some from Zacatecas) and selling their espresso beans direct to customers throughout Canyon. In 1927, Angelo died suddenly and his son Giovanni took over operations at Rincon de Dios. He would continue to roast and sell his espresso beans until his death in 1987. Throughout most of the 20th century, Canyon roasts its own coffee rather than purchasing beans from other growers or roasters. This decision was made because canyon believed that quality control was important for their caffeine-based products, as well as for preserving the unique flavor profile of their beans. In fact, one such reason why Canyon continues to produce high-quality coffee is because they don’t rely on any outside sources for flavor improvement – all their flavors are created within each bean itself!

In 1886, John McCulloch and his brother-in-law James Fenton leased from the Mexican government 8 square miles (20 km2) of land east of present day Canyon on the Frio River. The Fentons name means "the place where two rivers join". In 1905, Isaac Hayes purchased 640 acres (250 hectares) west of Canyon from J.M. White and others for $6,000. He built an frame ranch house which still stands today on the site of his home. By 1907 canyon had a post office with one employee and eight mailboxes; however it was discontinued because no letters could be sent to residents because there was no water available except during floods or when supplies arrived by boat from Lubbock Touchstone Dam Boat Dock across the river
