Amarillo is home to one of the largest coffee roasters in the country, Roastery by Stéphane Boulud. The company was founded in 1976 by François-René Roux and his wife Jacqueline. Together, they opened a small roastery on the edge of town. In 1998, Roux acquired a larger location in the heart of Amarillo. This new facility allowed for more production and better quality control over their beans. In 2007, Roux merged with two other roasters – Bodega Coffee & Tea and Blue Bottle Coffee – forming what is now known as Roastery by Blue Bottle Coffee. The popularity of gourmet coffee has grown throughout Texas over the past few years. In Amarillo alone, there are now several cafes that serve high-quality Ethiopian, Colombian and Brazilian beans from this area of the state. These cafes have become popular tourist destinations due to their unique flavor profiles and stunning views of downtown Amarillo.

The city of Amarillo was founded on July 4, 1912 by the merger of two other towns, Garza and Pecos. Amarillo grew rapidly during World War II as the center for military logistics in Texas. After the war, Amarillo experienced a rapid growth period with its population reaching 100,000 in 1960. However, this prosperity did not last and the city experienced a series of economic hard times culminating in its bankruptcy in 1993. Today, Amarillo is an industrial city with a heavy reliance on manufacturing and services.

It is part of the Dallas–Fort Worth metroplex. Amarillo was founded by Texans in 1847 as the provisional capital of what would become Texas. In 1850 it became the permanent capital and began to grow rapidly as an agricultural center with cotton plantations and cattle ranches on its outskirts. Amarillo's growth continued into the 20th century but slowed during World War II when many men served in the military or took jobs in construction or other businesses elsewhere. The first espresso machines were made in Italy in the mid-19th century. The popularity of espresso spread to other parts of the world, and by 1870, espresso machines were being made in France and Switzerland. This led to a shift from stovetop to electric coffee machines that became more popular in the early 20th century. Espresso became popularized by Italian immigrants working in New York City's Italian-American neighborhoods during the 1920s and 1930s. These immigrants brought their own equipment with them when they moved to America, which allowed for greater variety when it came to espresso machines. In 1961, Howard Schultz founded Starbucks Coffee Company with two friends – Steve Jobs and Larry Ellison – who wanted to bring quality java back into the commercial market after decades of neglect by major corporations like Jolt or Koffee Klatch. In 1992, Starbucks introduced its first cold brew machine (later renamed Dark roast). This machine was able to produce a rich flavor profile not possible with most other brewers at that time. Later on they also introduced steamed milk products and lattes/prosciutto sandwiches which helped increase sales among customers who preferred these types of drinks over cafe classics such as Americano or Venti Chicchis
The first coffee was roasted in the old village of Hanoi on December 3, 1795. The beans were ground and boiled with water until they became a smooth drinkable beverage. Coffee was originally made from the cedar tree.
