Alamo coffee started as a small business in the early 1800s. The first coffeehouse in Alamo was founded by James Robertson and his brother-in-law, John Garner, in 1824. From these beginnings, Alamo Coffee has been an important part of the community and its history. The Robertson brothers were instrumental in helping to popularize coffee in Texas and spread the taste throughout the United States. In 1828, they opened their first shop on East Houston Street in downtown Alamo. This establishment is still functioning today and provides a valuable reminder of how coffee was once so important to this region. Over time, other local businessmen partnered with the Robertson siblings to help continue Alamo Coffee's legacy of quality service and delicious coffee. These entrepreneurs include Isaac Watts (the father of noted UT professor Dr. Jens Ludwig), Andrew Dunn (founder of several businesses including The Koffee Klatch Restaurant), and Aimee Mann (co-owner of Austin's longest running barista shop). The first coffee shop in Alamo was opened by a group of businessmen in 1912. The business grew quickly and soon there were four stores within a block of each other. In 1916, the city council established the Alamo Coffee Company as a publicWorks organization to provide affordable coffee for citizens. The company continued to grow and expand until it became one of the largest coffee retailers in Texas. In 1946, the company merged with another coffee retailer, The National Coffee Company, which created the largest java chain in Texas at that time. In 1984, the company was acquired by Peet's Coffee & Tea Corporation, which modernized and renamed it Peet's Coffee & Tea Corporation-Alamo Highlands. In 2006, Alamo Highlands closed its doors after more than 50 years of operation. Today, only remnants remaining of Alamo Coffee can be found scattered around town; however, their legacy still lives on through their popular products and memories
The Alamo is a stately old structure, once the largest and most impressive fortress on the Texas-Mexico border. It has been destroyed many times, but its story is still popular among Texans and Mexicans alike. The Alamo was founded in 1836 by Captain Comanche Chief San Antonio Jimeno as a military garrison to prevent Mexican forces from crossing the Rio Grande into Texas. The fort held out for nine months before being surrendered to Mexican troops led by General Santa Anna. Over time, the Alamo became an important symbol of Texan independence and resistance against Spanish colonial rule. In 1853, three years after it was built, Mexico decided to cede Texas to the United States. The fort continued to be used as a military post until it was finally abandoned in 1865. Today, much of what is left of the Alamo can be seen near downtown Austin.
As coffee began to develop, there were many different methods used to produce it. One of the earliest and most common methods was to roast the beans in a pot on the stovetop. This method produced a lower quality cup of coffee because the bean had too much acidity and flavor. Another early method was to use a still or water bath process that caused CO2 gas bubbles to form in the coffee. In 1892, an American named Julius Caesar introduced what is now considered one of the best-known artisanal coffees - The Rome Coffee Company's Roma ( Ethiopian Yirgacheffe) beans. This Beans had been roasted by hand at a small plantation near Rome, Italy with whole fruit and spices being used instead of harsh chemicals and other additives typical of many later industrial-era roasters. After World War II, several new technologies were developed for production of high quality artisanal coffee such as automatic thermal oxidizers (ATOs), pressure vessels, cold pressing techniques, and even genetic engineering for improved bean Variety. As these technologies became more advanced, their benefits for coffee growers became clear - they allowed greater yields per acre while also providing better tasting cups due to increased purity and composition within each batch of beans). This continued growth in technology led some growers to experiment with new brewing methods such as cold pressing using whole fruits or vegetables as opposed to processed oils or nuts which gives this type of coffee its unique taste profile

The Alamo is a nonprofit research and educational institution in Texas that preserves the history of the Mexican-American War. The property on which the Alamo stands was purchased by General Sam Houston in 1836 for use as a military fortification. The fortifications were destroyed during the Mexican–American War, but were rebuilt and reopened in 1848. On July 6, 1857, an attack on the fort resulted in the death of six Texans and five Mexicans. The remains of those killed at the Alamo are buried there.
