The Morristown community was founded in 1817 by James H. Morristown and his wife, Sarah. The town was named after their family's home, the Morriston estate in County Down, Ireland. The first school in Morristown was erected in 1819. By 1830, the population of the town had reached 100 residents. In 1838, a post office was established in the town. The town saw some growth during the Civil War; by 1865, it had a population of 210 residents. However, due to Sam Houston's victory at San Jacinto Heights and subsequent Reconstruction policies, Morristown declined thereafter until it achieved its current size in 1960.
