In 1912, Harry Ott arrived in Brookings from Minneapolis and started Ott's Coffee Shop which operated until 1974. In 1984, Ott's Coffee Shop became The Dutch Tavern & Cafe which still operates today as a full service restaurant with a variety of breakfast items as well as coffee services including espresso and French press brewing. The first Starbucks opened its doors in downtown Brookings in 1997.Starbucks now operates throughout Brookings with more than 26 locations across South Dakota and Minnesota. Brookings is a town in southern South Dakota, United States. The population was 8,572 at the 2010 census. It is part of Sioux Falls metropolitan area. The name "Brookings" comes from the James Buchanan family's hunting ground near what is now Brookings. The community was founded in 1886 when wealthy ranchers bought land and began to build a log schoolhouse, which they named after President James Buchanan. In 1892, the first hospital in South Dakota was built in Brookings and it became the county seat of Lakota County until 1907 when it moved to Sioux Falls. In 1912, during World War I, Brookings hosted an American Expeditionary Force (AEF) training camp for Australian troops before their march into battle against the Ottoman Empire that same year. The camp has been recognized as one of the most significant non-combat events of World War I by historians. In 1923, local investors organized a cooperative grocery store which grew into a major grocery chain today known as Co-op Grocery Corporation. The store still stands on First Street within Brookings limits today and is one of only two remaining co-ops in South Dakota remaining unchanged since its creation over eighty years ago! A post office called Brookings was established in 1886, and remained operational until 1925. A new postal facility was constructed at what is now Interstate 94 just east of town in 1986 and served as the initial mailing address for many residents including current mayor Donny Schollenberg!

During his presidency, Brooks helped create what is now known as "the New Deal Coalition" which included powerful Democratic congressional leaders like Robert Wagner of New York City; Everett Dirksen of Illinois; Strom Thurmond of South Carolina; Lyndon Johnson of Texas; George Wallace of Alabama;Walter Mondale of Minnesota;and Eugene McCarthy of Massachusetts. Brooks remains an honored memberof both the Democratic National Committee (DNC) and the Ulysses S. Grant Presidential Library Foundation boardwalk committee- chairman emeritus since 1988). In 1983 he was elected Chairman Emeritus (CE)of The Brookings Institution after serving as that body's Vice Chairman from 1972-1983 when he stepped down due to ageism within that organization at that time
The Brookings community was founded in 1881 when the United Order of Dakota men and women organized to help build a new rail connection between Sioux City, Iowa, and Rapid City, South Dakota. The town was named for General Alfred I. Brookings, an American general who had served in the Mexican-American War and the Civil War.
