The first coffee beans were roasted on an old farm outside of town in 1887. In 1915, Theo van Doorn, a Dutchman who had moved to Hermiston to work as a grocery store clerk, introduced twofold-roasted coffee beans to the community. These days, most of what Hermiston sells comes with either single-origin or blend origins. The region around Hermiston has been producing good quality coffee since before European settlers arrived. The Butte and Umpqua Rivers provide excellent water conditions for growing coffee trees andrewidjeffersonnovember4th1869a group of eight men started planting coffee plants at Arendale Ranch near present day Hermiston. In 1872, Captain Hutton founded the Northrop Coffee Company near what is now Rexburg in order to sell his roasted Java coffees from his home ranch . By 1886 there were four businesses sellingJava coffees: Northrop Coffee Company, Jeffery Coffee Co., Harry Denny’s Coffee House & Cafe and John Prentice’s Warehouse . By 1893 there were twelve businesses exporting Java coffees including: Wm Fenton & Son (Brewers), Jno Cockerill (Proprietor), Adam Smith (Household Goods) and Rufus Carpenter (Dealer).

Hermiston was first established in 1876 as a settlement on the east side of what is now Linn County. The town's name derives from an earlier name for the area: Hermosillo. The town was platted in 1876 by George Capps and James Hinton and named after Hermosillo, Mexico City. In 1886, Hermiston became one of the townships within Linn County. In 1907, it became a city when it merged with nearby Portland. On May 14, 1916, Hermiston voters passed a resolution to annex adjacent Butte Creek Township to make it a city also. That same year saw another merger; Hermiston amalgamated with nearby Milwaukie to form what is now known asPortland-Milwaukie Metropolitan Statistical Area (MSA). In 1922, Herbstson erected an observation tower atop Butte Hill just outside of town limits to commemorate America's centennial year. Today that hill remains an important landmark in Hermiston and is home to both the Town Hall and Museum which are open daily 9am-5pm during regular business hours or until 4pm on special occasions According to the US Census Bureau, the population of Hermeston proper increased from 2,591 in 2000 to 3,023 as of 2010

In 1951 Mayor Lewis Gillett became the first person ever elected to a full term without running for re-election when he won a special election against incumbent Weldon Witherspoon; he would serve until his death in 1955. In 1972 Hermiston played host to Expo '72 when it hosted an international exposition celebrating world peace which attracted more than 160 different countries' exhibitors and visitors. during those days it had three stores: J & B Hudson's Hardware Store on Southeast 5th Avenue (), Willamette Valley Clothing Store on Southwest 3rd Street (), and American Gold Coin store on Northwest 2nd Street ().
