The first people to live in Canby were Native Americans who hunted and gathered game along the Willamette River. The townsite was named for Captain George Canby, an early settler. In 1872, the Pacific Railroad established a station in Canby on its way from Salem to Portland. The station was used as a stopping point for travelers traveling between Salem and Portland. The community developed rapidly after that point; by 1907, there were seven businesses in town and $10,000 worth of assets. In 1915, Canby had an elementary school and a post office; by 1920 it had a library and two churches. In 1922-23, construction began on what would become State Route 99; the road became reality when it was built through Canby and several other nearby communities to connect with Oregon Highway 97 near the then-new state capital of Portland. By 1940, Canby had six stores, four restaurants, one grocery store/marketing center and 10 businesses employing over 100 people total; during World War II it supported military training camps located within miles of town while also becoming home to numerous local manufacturers of munitions such as Armstrong Whitworth & Company (Aylesbury) and Northrup Grumman (Burbank). After the war ended in 1945 most manufacturing ceased but some continued until 1967 when all but one business closed due to technological advances including plastics production which made products more difficult to recycle or reuse than ever before making them more expensive for consumers overall. By 2000 only one business remained open: KFC fast food restaurant which still operates today.
