When Williston first started to boom as a coffee town in the early 1800s, it was a small community of about 25 people. The local farmers grew coffee and traded it with other towns in the area. Coffee beans were brought overland by wagonloads from South Dakota, Nebraska, and Wyoming. The first Coffee Bean Roasters opened up shop in Williston in 1912. Over time, other businesses cropped up around the town, like grocery stores and hardware stores. Over time, the number of people living in Williston increased as well; however, production never really went up until after World War II when things changed with the introduction of automated equipment for roasting beans. After that point, coffee production again decreased until the current day – mostly due to environmental reasons, such as lack of irrigation ability.

Williston is the smallest town in North Dakota and the only one that was founded by Europeans. The first European to settle in what is now Williston was Pierre Chouteau, who arrived in 1844. He built a cabin near the present day intersection of Hwy. 281 and Hwy. 25. Chouteau's cabin still stands today and is a museum. A second European to settle in what is now Williston was George Kelsey, who arrived in 1851. Kelsey built a cabin on the east side of town near modern day Highway 281 and Hwy. 25A. Kelsey's cabin still stands today and is a museum as well. In 1861, John Smedley established a post office at Williston with seven residents mailing letters using wagons from their homes for delivery to other settlers in nearby villages such as Rapid City or Bismarck (then called Sioux Falls). By 1865, there were twenty-eight residents living at Williston with mail delivered by wagon from all over North Dakota including Great Falls, Fargo, Minot, Bismarck, and Murphysboro (now Grand Forks). In 1868, local farmers began selling produce directly to village residents which increased business activities at the post office which soon became known as "The Grosse Pointe". In 1870s & 1880s local lumber companies organized drives into western Canada for sawmills operating out of camps located along the banks of the Missouri River south of present day Missoula; these mills produced high quality lumber which was used throughout North Dakota until it was replaced by machine-made materials beginning in the early 20th century. In 1886 local doctor Drayton organized a health clinic serving entire rural area west of Missoula; this clinic provided free medical care to villagers until 1941 when it closed due to World War II restrictions on medical services during wartime times (the US military had control over most resources within North Dakota). In 1907 WILLISTON TOWNSHIP FOUNDATION WAS ESTABLISHED TO SUPPORT LOCAL EDUCATION THROUGH PROVISION OF SCHOOLS AND OTHER SERVICES INCLUDING HEALTH CARE FOR VILLAGES WEST OF MISSOULA . WILLISTON CITY WELFARE COUNCIL WAS ESTABLISHED IN 1912 TO PROVIDE SOCIAL SERVICES TO VILLAGERS WITH DISABILITIES . THE FIRST HIGH SCHOOL WAS OPERATED BY THE WILLISTON TOWNSHIP FOUNDATION IN 1923 . WILLISSON COMMUNITY COLLEGE WAS established IN 1961 TO SUPPORT UNIVERSITY STUDENTS FROM NORTH DAKOTA EACH YEAR . Williston Township originally consisted of three separate townships: Big Rock Township on the east side of town; Anishinaabe Township on the north side; and White Earth Township on the west side; each township had its own government with its own schools, courts etc.; however following World War I most residents moved away from isolated communities so small towns could not provide services adequate for their needs having inadequate infrastructure such as roads or water systems -resulting in some smaller villages developing overnight into large city sizes while others slowly but surely faded into obscurity like many small towns throughout America during this time period before being reborn again during recent decades as part of larger metropolitan areas across America such as Fargo/Moorhead -Williston remained an unincorporated community surrounded by residential neighborhoods until 1924 when it became one hundred percent annexed into Fargo County becoming known simply as "Fargo" within that county limits despite never sharing any borders with either Minneapolis or St Paul COUNTYESTS
Williston was founded by George A. Williston in 1881. The town became a U.S. destination for oil production in the 1920s and 1930s, thanks to its nearby shale fields. In the 1940s, the town developed into an agricultural center, with cotton, soybeans and livestock being its dominant crops. Manufacturing began to take off during the late 1960s and 1970s, but has since declined overall; today only a few small businesses remain in the town.
