In the early 1800s, coffee was a rare commodity in North Dakota. However, because of the Linden Hills location, Williston became one of the first places to start roasting and selling coffee. The history of artisan coffee begins with two men who founded the company in 1885: John D. Rockefeller and his son Nelson Rockefeller. They were looking for a place to roast their own beans and found an abandoned farm called Linden Hills on the banks of the Missouri River. After purchasing it, they began to roast their own coffee and sell it door-to-door. By 1912, they had moved their business to a larger facility in downtown Fargo. Today, there are over 10 businesses that operate as artisan cafes throughout North Dakota. These cafes offer compounds such as espresso or cappuccinos made with richly nuanced flavors from different origins including Ethiopia, Argentina, Kenya and Sumatra. Each cafe has its own unique style which makes them stand out from other stores in their community or region. Some notable establishments include The Coffee Bean & Tea Leaf in Fargo; The Monk’s Kettle at Mitchell Park in Brookings; and Rangeman’s Coffee House at Capital City Mall in Sioux Falls

A recent study published in the Journal of Agricultural and Food Chemistry found that organic coffee beans provide a higher-quality cup of coffee than either conventional or non-organic beans. The study participants tested different types of beans, Roasts, Blends and Single Origin coffees from seven different countries. They found that organic coffee was more expensive but had greater flavor and aroma than any other type of coffee. Organic coffee is not just for those who drink Folgers or Starbucks Everyday Joe. It can be made at home with a few simple ingredients by using whole bean organic coffee beans, grinding them to a smooth paste with an automatic grinder, then adding hot water and baking it in an oven set to 195 degrees Fahrenheit for about 20 minutes until the beans are ground very fine. Today there are many different types of artisanal coffee available on the market, each with its own unique flavor profile and history. Some notable examples include The Koffee Klatch from Kenya which is made with ground organic Arabica beans sourced from local farmers; Blue Bottle Coffee's Old World Vintage blend which Includes old world Columbian and Indonesian coffees; and Joe's Airstream Coffee's signature Breakfast Blend featuring whole bean origins from Guatemala, Honduras and Ethiopia.

Williston has hosted several United States Olympic Team members over the years including swimmer McKayla Maroney and shot putter Tyson Gayles; both athletes were born hereabouts respectively in 1988 and 1996respectively
