One of the earliest roasters to experiment with fresh roasted coffee was Peet's Coffee & Tea in Amsterdam, Netherlands in 1912. They started making two-pound bags of fresh roasted coffee, which they sold at their store and also gave away for free to customers who brought them any kind of cup or mug. In 1916, Dutch café owner Hendrik Peeters introduced his first espresso machine, which he called the "Peetje". This machine produced single origin Italian roast coffee that was served over a small pouf on the bar. It wasn't until 1949 that Peeters opened up his second café which became known as The Rijksmuseum; here he began selling whole bean ground coffees from his own roasting operation. In 1978, Dutch cafe Koufax introduced its first espresso machine that used an automatic PID control technology to produce high quality espresso drinks without having to use a human operator. This technology continues to be used today by many cafes across Europe and North America including La Pavonière in Paris, Café Bazaar in Istanbul, and Four Barrel Coffee Company in Austin TX. Today there are several different types of fresh roasted coffee available on the market: dark roast (or robust), medium roast (or classic), light roast (or very mild), decaf (coffee with less caffeine than regular cafés), fair trade / organic products etc., all of which offer unique flavors and aromas not found elsewhere. In addition, many cafes now also serve cold brews made with various processed fruits or ice creams as part of their breakfast or lunch menu options- proving that even after millennia of experience, fresh roasted coffee remains one of the most popular beverages enjoyed by humans!
