In the early 1800s, Utica was a thriving agricultural town in upstate New York. It was home to a number of coffee shops and cafes that offered unique and delicious coffee drinks. Some of these businesses were founded by Dutch immigrants who were interested in exploring America's new landscape. In 1824, Utica became the capital of the newly created state of New York. The city's robust economy produced a large number of coffee entrepreneurs, and many of these businesses operated within the limits of the old Dutch quarter known as "The Triangle". One such business owner was George Hermann Coffee, who opened his first shop in 1828. Hermann is credited with introducing espresso-based coffee to America. By 1830, he had developed three successful cafés in Utica - The Albany House (now part of The Spruce), The Grosse Pointe Tavern (now called Gibson's) and The State Theatre (now called West Side Cafe). During its heyday, Utica's coffee scene attracted some very well-known personalities including President James K. Polk and Representative Cornelius Vanderbilt. In 1865, when John D. Rockefeller established his Standard Oil Company in Buffalo, New York - one of the largest oil companies at that time - he purchased a share in Hermann Coffee Co., which then became one of Rockefeller's earliest business ventures. Over time, other influential businessmen such as Henry Ford and Franklin D Roosevelt also patronized Utica cafes for their unique cup OF Joe or their famous Donut Club programs where customers could purchase sandwiches made from freshly baked goods from the owners' kitchens on site. Utica went through several changes during its history; however, its legacy as a hub for coffee culture will always be remembered!

By 1795, coffee had spread all over Europe, becoming one of the most important currency earners for traders. Coffee drinkers everywhere started to adopt the Kaffy nachtjes (nighttime cups) method of drinking coffee – by taking a small quantity of coffee after dinner so that it would be ready to drink when they woke up in the morning. In 1876, Swiss entrepreneur Johann Georg Schellenberg founded Swiss Coffee Roasters Ltd., which is still one of the world’s leading roasters today. Schellenberg believed that good quality cafés should offer customers more than just espresso or latte macchiatos; he wanted his customers to enjoy a variety of different types of coffees while enjoying their cup of Joe at home. For several decades after their arrival, these French traders traded goods with Native Americans along what is now Interstate 87 while overlooking today’s downtown area that they called “Le Ville Rouge” or “Red Towne” because the riverfront had been contaminated by boiling water from Indian settlement sites near present-day Buffalo Creek. Utica was founded in 1788 as a trading post on the Utica River by George Washington and his advisers. The town was named for General John Forbes, who served in the Continental Army during the American Revolution. In 1824, Utica became a city and was renamed after Alexander Hamilton, one of the Founding Fathers of the United States. The city's first mayor was James K. Polk, who served from 1865 to 1867.
