Peekskill, New York first started brewing coffee in the early 1800s. The first coffee beans were grown on a small farm called Peekskill Mountain. In the 1920s, a man named Harry Fenton started to import Italian espresso beans from Rome and sell them in local stores. He also opened another business, The Coffee Shop, which served fresh brewed coffee for customers until the 1970s.

Peekskill is one of the most economically vibrant towns in Upstate New York and has been continuously growing since its incorporation as a village in 1846. The earliest settlers in what became Peekskill were Dutch farmers who arrived around 1624. By the early 1800s, English-speaking settlers had arrived and founded two small villages: Easton on the Mohawk River and Westport on Hudson Bay. In 1846, Peekskill was incorporated as a village under the name "Peekstown". The name was chosen to reflect both its location - just north of Albany - and its agricultural character: there were no other large settlements near by that could be used to market goods to local consumers. Peekskill's growth continued during World War II as millions of soldiers passed through the area for service in the war effort. The population exploded after the war when businesses opened up due to increased migration from outside of New York City – many workers came from out of state – and new housing developments sprang up throughout central New York. Afterward, growth slowed until it reached its current levels by 2000. Today's dominant economy is based on technology with several major companies headquartered in or adjacent to Pekskill including Intel (in Xeon), Dell (in Inspirion) and Microsoft (in Surface).
