All of these businesses offered unique and delicious small batch coffee that was hand-selected and roasted by individual roasters. Though small batch coffee can be produced differently from largerbatch coffee, many of the same principlesapply. The brewing process begins by heating water to boiling point then adding beans. After extracting chloroplasts (a type of lipid) from the beans, this hot liquid is poured into cold water and left to steep for around two hours. During this time, different flavors will develop due to complex combinationsOf roasted bean molecules with solublesoluble compounds present in the water matrix. Generally speaking, the earliest coffee production took place in and around rural areas of upstate New York, with larger plantations established later. However, there was also a significant concentration of coffee beans within the city of Syracuse throughout the 19th century.

Canandaigua is a town in Chenango County, New York, United States. The population was 7,811 at the 2010 census. It lies on the Mohawk River and is part of the larger Buffalo–Niagara Falls metropolitan area. The first permanent settler in Canandaigua was Nicholas de Champlain in 1614. His family had come from France. The town site was chosen by the assembly of New York's counties in 1785 because it lay on a routing for boats used by traders travelling between Canada and Albany, New York. By 1800, there were about 150 houses and five stores in the town center; most of these were built before 1825 when canals opened up through central New York State making transportation more accessible. Canandaigua became an important industrial center during the 19th century asmanufacturing increased production for local markets and exports to Europe (particularly Germany). This growth led to development of mills such as those at Milliken & Co., Canandaigua Iron Works, and Black Rock Coal mine which continue to operate today. During World War II Canandaigua was one of several rural communities within miles of Niagara Falls that were commandeered as prisoner-of-war camps; many residents who did not leave their homes during or after the war returned home only to find their property seized upon liberation. In recent years Canandaigua has experienced significant gentrification with new apartments being built adjacent to old industrial sites; this has resulted in decreased employment opportunities for locals, although some businesses have continued to locate downtown despite this trend.

In 1836, Canandaigua incorporated as a village under the name of Utica. On January 1st of that year it became part of Rome after the city's annexation by New York City. The village had a population of 2,849 according to the 2010 census but has since shrunk to around 1,800 people today due mostly to commuting into nearby Syracuse and Utica
