The first coffee roasters in Batavia were primarily Dutchmen who grew their own beans. The first coffee shop in Batavia, New York was founded in 1834 by Dutchmen Pieter and Cornelis Slenter. The business continued to operation until the early 1800s. In 1836, a French-born coffee farmer, Jacques Lefèvre opened a small café on the northeast corner of State and Erie Streets. Lefèvre's cafe served only coffee and milk products. In 1846, American immigrants John (Peter) Gault and Isaac Sennett opened a store on Water Street that became known as "Gault & Sennett's Coffee House". The store offered both coffee and goods such as cigars and hardware. Gault & Sennett also maintained a bar where customers could purchase drinks such as whiskey or beer. In 1863, Nicholas Ditmars organized the first batavian cooperative society in Batavia when he purchased one hundred acres of land east of the village for $500. The society supplied beans to local shops including Gault & Sennett’s Coffee House, which continued to serve coffee even after the purchase. By 1867, there were more than twenty-five different COFFEE SHOPS operating in Batavia with an average of four per week serving up over eighty thousand cups of Java Coffee each day!
