In 1824, Fenton opened a more formalized business called The Coffee House which became one of the most popular tourist destinations in Elizabeth. At this time, coffee was still considered an agricultural product and was not yet enjoyed as a luxury drink. However, by 1830, when wealthy residents of Elizabeth started to arrive in increasing numbers, they began to appreciate the taste and quality of coffee beans from local roasters. Over time, these roasters became well known for their high-quality beans and improved brewing processes. In 1848, Edwin Drake opened his own coffee house on Market Street in Elizabeth. Drake's Coffee House quickly became one of the most popular tourist destinations in town due to its unique atmosphere and sensational cup of java. After Drake's death in 1851, his son James took over his business and continued operations until1891. At this point, James’s descendants transferred ownership of The Drake Coffee House to their daughter Alice Maynard Hunt (1911-2006) who operated it until her death in 2006. During Alice Maynard Hunt's ownership period,Elizabeth experienced some very significant changes that have long influenced its coffee culture: In 1951, The Daily News renamed Elizabeth "the Gourmet Capital of America" because then-Governor Harry Hughes proclaimed that "gourmet coffee is here." This designation helped promote new interest inElizabeth's unique cuisine and beverage options; as a result, tourism picked up significantly during Hunt's tenure as owner/operator of The Drake Coffee House. A few years later (in 1957), Mrs.' Evonne Duhalde brought over some French roast beans from her native France for use at her new cafe at 260 W 3rd St., which soon became known as 'The French Roaster'. Soon after that establishment opened its doors - although it did not serve any espresso - people would flock there for expert brewed french press coffees made with pure Arabica beans roasted fresh on site! later also moved across 4th street into larger space on 5th avenue where continues serving excellent gourmet coffees today
