According to coffee historian, Don Wasson, Lexington, Nebraska was the first town in the United States to roast coffee. It did so in 1875. The first café in Lexington served coffee and toast until 1898. In that year, a group of businessmen founded the Coffee Marketing Company and began selling coffee from their shop on Main Street. The company grew rapidly and soon had three stores throughout the city. By 1903, it was operating twenty-four stores across the United States with its own roasting plant. In 1916, Lexington became one of only two cities in America to host a World's Fair (the other being Stroudsburg, Pennsylvania). During the fairgrounds there were numerous cafes serving both fresh roasted coffee and pastries such as doughnuts and muffins. The fair also saw the debut of Lexington's first machine espresso machine which was used by manager Harry Withers for making long black coffees for his customers at his shop on High Street.
