In the early 1800s, coffee was a valuable commodity and enjoyed high prices in the Republic of Missouri. Roasters found that beans were grown near the waterfalls called The Gadsden and Spring rivers, which made for excellent coffee. The beans were roasted on small-scale farms before being sold to larger roasters.
The first large-scale roaster in Republic was Doubleday & Company, founded in 1891 by two brothers named John Doubleday and EdwardDoubleday. The Doubledays were responsible for introducing espresso technology to the United States. In 1912, they opened a second roastery in St. Louis, which became known as Doublespace Coffee Company. They soon expanded their business into other countries including Puerto Rico, Brazil, Argentina, Chile and Uruguay.
In the 1930s, Joe Esposito bought Doublespace Coffee Company and renamed it Joe's Coffee House Incorporated. He continued to roast and sell coffee until his death in 1978. After his death, management of Joe's Coffee House passed through several hands before it came under ownership by Tom Peters in 1995 who kept it open until 2003 when he closed it down due to financial difficulties. In 2003, an online retailer decided to buy Joe's Coffee House from Peters' heirs for $2 million dollars. On October 10th of that year, Justin Time Café opened up shop inside of Joe's old building with only 7 seats.
After 2 years of operations (and many failed attempts at reopening), Justin Time Cafe succeeded in opening up shop on December 9th 2006 with over 100 seats.
On January 24th 2009 Justin Time Café reopened its doors after a long renovation that included new flooring and an addition called "The Lounge". It now has over 200 seats< ref >https://www4/24.

Republic was founded in 1827 by parents of Captain James K. Polk as a small farming community named for their state's first president, James K. Polk. In 1838, when Kansas became a U.S. state, Republic remaining part of Missouri until 1861 when it seceded from that state to become a part of the Confederate States of America (CSA). After the American Civil War ended, Republic rejoined Missouri in 1865 and has since grown steadily with waves of immigrants coming to its agricultural industry which still thrives today: harvesting corn, beans, wheat and other crops; manufacturing goods such as tractors and radios; serving as an important stops on truck trips throughout Central Missouri; hosting annual farmers markets; and becoming one of several communities within minutes' drive for residents in St Louis metropolitan area

Republic, Missouri is a town in St. Louis County, Missouri, United States. The population was 5,976 at the 2010 census. It is part of the St. Louis metropolitan area. Republic was founded by James K. Polk on October 27, 1848 as a small farming community named Independence Hill to support his America First party's run for office against Stephen A. Douglas in the presidential election that year. The town began as a farmers' market and general store with about 10 residents in 1849-50; it had no school until February 1850 when Wm Gentry taught 3rd grade there until he resigned from teaching due to illness before the school's first term started because of lack of funds to keep it open. In 1851 Republic also erected its first school building which still stands today (it burned down in 1951). In 1852 Denton Scott opened a sawmill and grist mill here which became one of the largest employers in town with over 100 jobs when it went into operation; it continued to operate until 1979 when it closed due to low demand for lumber during the Great Depression years. In 1865 Republic voted to become an independent city under then-President Andrew Johnson due to dissatisfaction with the state government's treatment of their county constituents; this vote failed but resulted in an increase in Republican representation on the village board beginning in 1870s despite low voter turnout compared to other towns within St.Louis County – something that would continue through most regime changes up through 1960s suburbanization/division of rural counties throughout central Missouri Valley (except for two exceptions: Springfield Township and West Lebanon Township), while republican representation slowly eroded statewide following Franklin D Roosevelt's New Deal policies nationally leading directly to World War II mobilization efforts across all levels of local government throughout central Missouri Valley). In 1941 Union Pacific Railroad built tracks running through town southwest from their main line at Racine Junction just north of I-70 exit 124B going east towards Hannibal and west onto US 64 until they discontinued service some time after 1945; this event helped contribute significantly towards decline & abandonment of Republic over ensuing decades along major transportation corridors within central Missouri Valley resulting primarily from mergers & acquisitions across various rail companies across several states culminating with Amtrak taking over operations starting around 1970–1975 effectively ceasing passenger train service between Denver, Colorado Springs, Overland Park and Kansas City effective May 1974 creating what has come be known as "the Great Central Westerner" railroad shutdown era coinciding generally speaking with overall regional Decline (& Fall) of American Manufacturing industries particularly along Interstate 170 corridor within greater Des Moines metropolitan area paralleling similar trends within broader Midwest healthcare industry affected regionally by same factors including increased costs associated with new technologies such as information technology allowing large hospitals etc., Mexican Drug cartels increasingly operating beyond traditional geographical boundaries becoming increasingly more sophisticated organized crime groups globally looking for areas where illicit revenue could be generated SEE "the Midwest decay" article http://www2a1ar1bi3ou4c7mc5evpwvopkz0cu1a3o6e0
