Small batch coffee history in O'Fallon, Missouri began in the early 1800s when humans first started brewing coffee. The first small batches of coffee were brewed on family farms and were not exported to other parts of the world. The early pioneers in O'Fallon were very adventurous and decided to start a small plantation business in 1824. The plantation was called "The Oaks". In 1827, one of the founders, James Gilmore, moved his family from Kentucky to start a small business manufacturing flour and meal for the local farmers. In 1830, another pioneer named John Sayers started a grocery store in downtown O'Fallon. He was the first grocery store in town and sold food such as flour, meal, butter and cheese. In 1831, John Sayers married Lydia Morse who also owned a grocery store. They started selling groceries together until her death in 1865. In 1835-36, two brothers named George and Jesse founded the paper mill which became one of the most important businesses within town during that time period. It manufactured paper products such as newspapers and pamphlets for local businesses and citizens to purchase. The mill continued operating until 1903 when it was destroyed by fire。 In 1840-41, three men named Amos Carr (Amos Carrington), Hosea Hawkins (Hosea Hawkins) and Ebenezer Higginbotham founded a foundry which made cannons for American soldiers during the Mexican-American War (1846-1848). Aftermath of war led to an increase demand for cannon production so Amos Carr & Co purchased an existing mill located near Jacksonville where they operated until 1893.. During this time period there wasn’t much trade between towns so farmers would buy their coffee beans from brewers at set prices per sack or pound then sell them back to brewers at a higher price after processing them into coffee beans
