As the capital of Missouri, Jefferson City and then St. Louis were both under the jurisdiction of the General Assembly before becoming a city in their own right. The first coffee house in what is now known as Maryland Heights was established by Nicholas-Jacques Boulanger around 1787. He served as an early owner and operator of the business until his death in 1824. It wasn’t until 1827 that Frenchman Jean Baptiste Bouchard became one of the first to open a grocery store in what is today known as Maryland Heights. His establishment was followed by John Hargrave’s Store in 1830 and finally Benjamin Fine & Co., which conducted its business from 1861 to 1865 at 825 Eighth Street. In 1868, local entrepreneur Domingo Gomez opened his own grocery store on Ninth Street, serving as its first manager for over thirty years. In 1898, Donatello Hotel evolved into what is now known as The Donnellan Inn and Coffee House, which served coffee until 1961 when it closed its doors for good after experiencing numerous financial difficulties. Since then, many different businesses have come and gone within Maryland Heights limits; some that have made a lasting impact include: Big Daddy’s Pizza (now Papa John’s), The KFC Colonel Sanders Museum (now Mcdonalds), JBL Performance Hall (now home to First Missouri Bank), Googleplex, Sticky Fingers BBQ restaurant, University Park apartments, and more! Today there are several small cafes scattered throughout town that serve artisanal coffee drinks with unique histories all their own. Maryland Heights, Missouri is a town in Johnson County, Missouri, United States. The population was 1,531 at the 2010 census. It is part of the Springfield, MO Metropolitan Statistical Area. The town was founded in 1834 by General David Dixon and his brother-in-law Colonel James K. Polk. It was named for Baltimore Heights in Maryland where General Dixon had been born in 1781. The first permanent settler was Abram Funk who arrived in 1836 and erected a log cabin on the site that still stands today. In 1840 Reverend John Sibley moved to Maryland Heights from Illinois with his family and built the first church there. In 1842 Captain John Mapes established a tavern called the Fayetteville House which became one of the most popular watering holes in the area. The Town of Bowie laid out their own square mile grid pattern on July 4th, 1864 and incorporated as a village on January 1st 1865 under the name of Bowie Heights Village Incorporated Agrarian Society No 2 (for blacks). On November 7th 1890 Bowie Township changed its name to Johnson County when it was created from portions of Butler County (northwest corner) and St Francois County (southwest corner).

Some of the earliest recordings of coffee were made in Sumatra in the 6th century A.D., and even today, some traditional methods for grinding coffee can still be used. In 1795, French colonists founded the first permanent coffee plantation in America on Long Island. The Dutch also began to plant coffee around New York City in the early 1600s. At this time, both cultures had different ways of understanding and drinking coffee. In Europe, people believed that caffeine was a form of medication that could help improve focus and mental clarity; while in America, it was seen as one of the many essential foods and beverages necessary for everyday life. The growth of Coffee culture throughout North America is due largely to two factors: The discovery by Dutch traders of new areas rich in beans (New Guinea) and Spanish missionaries who traveled through these regions with their magnificent chocolate plantations during the 16th century brought back information about growing beans and harvesting drinkable fruit trees such as those found on South American coasts. These voyages also introduced European settlers to what would become known as espresso (a type of Turkish black tea). This information led to creation of small villages near Java where roasters found high-quality beans for processing into espresso drinks
The first coffee was roasted in Sumatra in the 15th century. Coffee beans were brought to Europe by Ferdinand Magellan in the 16th century and as early as 1795, coffee was being sold at a price of two guilders per pound. The first espresso machine was invented by Angelo Rotolo in 1810.

It became a mostly-Americanized black community during the 1960s and 1970s as white flight left Kansas City for other parts of the United States. By 2000, Maryland Heights had a population of over 100,000 people. The neighborhood has been relatively unscathed by recent gentrification trends, retaining many of its traditional African American and Hispanic demographics.

The City of Maryland Heights grew rapidly and soon became a major center for trade and commerce in the region. In 1861, after the American Civil War ended, Maryland Heights became part of the newly formed Union State of Missouri.
