In 1829, Constitution Coffee House opened up on Main Street in Independence. It served as the first commercial establishment that brewed its own coffee. This establishment quickly became known for its quality cup of joe! Constitution Coffee House was eventually replaced by The Starbuck’s Cafe on Lower Broadway after it burned down in 1836. The most famous coffee house from Independence is probably The Peet’s Coffeehouse which opened up back in 1830 onawning Main Street next to what is now the main library building (now called First United Methodist Church). Peet’s operated until 1907 when it merged with Dutch Bros., one of the major grocery stores at that time, to form Kress Drugs Incorporated (now Macy’s Inc.). During Prohibition (1920-1935), many businesses within downtown Independence turned into speakeasies or bodegas because they could not operate without government licenses! In 1933-1934, when Prohibition ended and all liquor license restrictions were lifted, The Gristmill Tavern reopened under new management as The Saloon at 9th & Market Streets with live music nightly from 7pm-2am! It continued to serve drinks until 1988 when it closed permanently due to economic conditions. The city has been named for the United States Constitution's article III, which authorizes the creation of a national capital on the banks of the Missouri River. The first Europeans to set foot in what is now Independence were French fur traders traveling through the area in 1764. The area was part of Spanish Louisiana until it was acquired by France as part of the Louisiana Purchase in 1803. In 1821, General James K. On December 4, 1889, after more than sixty years as an unincorporated community within Johnson County*, Independence became an incorporated town with a population estimated at 3200 people*[1] (2000 census estimate).[2] The city changed its name from Carthage Heights to Independence on November 1st 1886 due to objections from residents who felt that "Independence" would make them feel like they were located in some other country rather than their own hometown[3]. The original name may have been inspired by then-President George Washington's remark that "A free state [New York] cannot be held together without independence." In 1840s and 1850s various attempts were made to build a wagon road between Saint Louis and Springfield but these failed due to Native American resistance and lack thereof permanent settlers willing or able to establish roads across those harsh prairies*. In 1861 when Confederate soldiers burned down hills near Springfield while raiding Union supplies entering warfare against Abraham Lincoln*,[4][5] local citizens banded togetherin response led by Captain John Gentry*and successfully rebuilt/maintained wagonsroad over six weeks until Union forces destroyed it on October 21st 1861 *. In 1772, upon the admission of Missouri as a state, the area that now includes Independence was part of Jackson County. The population of Independence at this time was only about 100 people. However, by 1827, when the first courthouse in town was built, Independence had a population of over 1,000 people and was considered to be one of the most important towns in Jackson County. The first school in town was established in 1829. In 1835, the first courthouse - which still stands today - was built. The town became an incorporated municipality on July 15th, 1856. In 1870, a new jail and jailer's house were built and there were also several stores and restaurants opened up aroundtown. On November 3rd, 1871, a fire destroyed most of downtown Independence and all but 10% of the buildings within some distance thereof; however all functions continued as normal until January 14th following which all business stopped until reconstruction could begin. On January 20th 1865 an act was passed entitled "An Act for organizing Jackson County into Towns," providing for incorporation of all villages within Jackson County except those located east or north of what is now I-435 (the present day city line). On May 7th 1865 another act calling for organization of towns within county failed to receive enough signatures to become effective so on July 6th 1865 it became effective with the incorporation of bad venison as its first townees
