In 1912, a man named Harry Juhl started trading goods from his farm at 5th and Maple streets. He started selling roasted beans from his farm to local customers. By 1916, the business had grown to include a café and grocery store at 6th and Maple Streets. With the increase in traffic, Juhl needed a bigger space so he built himself a two-story frame building on top of his farmstead that still stands today. This structure served as the town's first courthouse from 1917 to 1919. In 1922, prohibition began to take hold in St. Louis Park and Juhl decided to close his business because he couldn't compete with booze salesmen on price or quality of service. However, many people continued to patronize his establishment because it was one of few businesses open during prohibition years without being raided by law enforcement officials. In 1933, when Prohibition ended for good, Juhl reopened his business as The Coffee House & Brewery which continued serving coffee until 1975 when it closed its doors for good due to economic troubles combined with changes in technology which made brewing coffee more difficult then ever before . The name "St. Louis Park" comes from a Swedish Lutheran missionary named Lars Olson who settled there in 1854 as part of his effort to spread Christianity to Native American nations in what is nowMinnesota. The first settler in St. Louis Park was Isaac Nordstrom, who arrived in 1855 and bought land from the Ojibwe people near present-day Arlington Heights. In 1860, John Addison opened a store in what is now downtown St. Louis Park and soon became one of the leading businesses in the area. He served as mayor of StLouis Park from 1865 to 1870 and also ran for office as a Republican Party candidate on several occasions; he lost all four attempts to be elected to Congress (the only time he ever ran). In 1862, Rasmus Jensen established himself as an agriculturalist with his farmstead just east of present-day Arlington Heights on what is now White Bear Lake Road. By 1871, Jensen had moved his operations westward into what is today Minneapolis – this was during the Minnesota Gold Rush era when vast amounts of gold were discovered throughout Minnesota – and began selling flour, potatoes, hay and other goods from his farmstead through local merchants until it became too risky to operate out of town by himself; he then built a house on Nicollet Avenue which still stands today as one of StLouis Park's most notable landmarks.) In 1955, St. Louis Park became a town when it merged with other towns in Ramsey County to form Maplewood Township (now Hennepin County). The merger was approved by voters on November 3rd ballot and took effect on December 1st. In 1970–71, St.Louis Park merged with neighboring Eden Prairie to form what is now called Mound City Township (now Ramsey County). This merger also passed voter approval and took effect on December 1st.
On October 25th, 2007 - just over seventy years after incorporation - St louis park announced they would be retiring their golden eagle mascot which had been used since 1907-2008.
