By 1851, when Great Northern Coffee Co., Inc., was founded in North Mankato, coffee had become one of the company’s main products. The company exported its beans all over the United States and Canada before entering into joint ventures with other companies such as Dutchlander Coffee Roasters and Peet’s Coffee & Tea Company. In 1912, Great Northern merged with Dutchlander to form Dutchland Coffee Company (later part of GNC). This merger resulted in nearly doubling Great Northern’s production capabilities and helped propel it into second place behind only Aztec Coffee Enterprises Ltd.. In 1936, Dutchland merged with Peet’s to form Peet &Dutchland Corporation. After World War II ended, Dutchland transitioned from a producer of roasted coffees to a manufacturer/distributor of Fanta Coffees products worldwide! During these years, North Mankato residents enjoyed someof the best-quality cupcakes ever made at two local bakeries – The Cake Shop located on Huron Street near campus and Mrs. Kapp’s Bakery on State Street just north of town center). both businesses were named after local women who had contributed greatly towards their establishment – Mrs Kapp being particularly successful at fundraising support for social welfare programs during hard times (e g food stamp recipients).
