The business was started by two farmers who were looking to start their own farm-to-table operation. The farmers purchased a small lot near the town and built a small cabin to roast their beans. From this small beginning, Crystal Coffee became one of the most popular small batch coffee businesses in the area. The first café owner, John Goudreau, operated his business for about 25 years before he sold it to another farmer, Harry Heggie. Heggie continued to operate Crystal Coffee until his death in 1978. During Hisggie's time as owner, there were several changes atCrystal Coffee including increasing production and opening more locations throughout Minnesota and Wisconsin. One of Hiskeyes daughters took over operations after her father's death in 1984 and she continued to runthe business until 2000 when it was sold to current owners Tom & Dawn Krieger. On November 3, 1933, its name was changed to Crystal City to reflect its growing importance as a commercial center and bedroom community for nearby Minneapolis. The city experienced some difficulty during World War II as many residents went into service or volunteered for military duty. However, thanks to wartime assistance from both the U.S government and private businesses, Crystal quickly recovered and resumed its role as a major financial and industrial center after the war ended in 1945. The population reached 602 by 1990 but declined to 553 at the 2010 census due to attrition from extinctions of smaller villages and churches that had Been merged with Crystal City during those years (the last being done in 2000). However, growth has resumed recently with new development such as apartments and factories along I-5 just south of downtown which have helped increase employment opportunities there while also helping to preserve downtown's historical architecture/looks
