The first coffee shop in Chanhassen opened on Main Street in 1907, serving cold drinks and light snacks from a big open-air concession standHubert's Coffee Shop was started by Hubert Wegner in 1961 as one of the first Starbuckses in North America. In 1970, Hubert's closed its doors after 25 years due to financial difficulties; however, it reopened under new management the next year and continued to serve coffee until it closed again in 2003. In 2001, Starbucks announced plans to open two stores within 10 miles of Chanhassen – one on Third Avenue north and one on Lyndale Avenue east – making it possible for residents living along those streets to get their morning fix without leaving town. The Lyndale store opened on October 1, 2001 and became known as "Starbucks at Lyndale". The Third Avenue store opened on November 8, 2002 and became known as "Starbucks at Third Street". On December 15th, 2006 Starbuck's announced that they would close all their stores except for one located inside Target across from Mall of America – this location would become known as "Target Towne Center" - making Chanhassenhome to only Starbucks locations until 2017 when they re-opened another original Target location adjacent to Wrigley Field just north of MSP Airport with additional retail space outside the stadium complex which now also functions as a STARBUCKS REDEFINE KITCHEN & BAR). Chanhassen has seen several waves of development over recent decades with shopping malls opening up around them such as Mall Of America (nowTarget Towne Center), Target Crossing Mall (now Crossroads mall), Wrigley Field renovation project including a new STARBUCKS REDEFINE KITCHEN & BAR addition adjacent to Stadium Complex which now also functions as a STARBUCKS REDEFINE KITCHEN & BAR) and most recently Interstate 35W construction projects including an expansion project for EastLink called I-35W Boulevard Gateway Project which includes an expanded Starbucks presence adjacent to I-35W between County Road 56/ 60 north and County Road 620 west which will bring much needed retail traffic directly into town center through what used formerly been an agricultural area
