The history of gourmet coffee in Waterville, Maine goes back to at least 1892. The first coffee shop in Waterville was the Seth Low Coffee House on Main Street. Seth Low was a grocery store owner who started serving high-quality coffee beans from his own farm near Waterville. In the early 1870s, John Purdy opened a small grocery and café in downtown Waterville. His cafe served rich brown bean coffees from his farm outside of town. In 1892, John Purdy's son, Harry, opened the first gourmet coffee shop in Waterville – the Low Coffee House. Harry's cafe became one of the most popular tourist destinations in town and offered customers unique blends of coffees sourced from all over the world. The popularity of gourmet coffee brought more people into town and began to drive down prices on quality beans. By 1930, only two shops remained in Waterville – The Low Coffee House and John Purdy's Cafe. However, these businesses continued to serve high-quality roasts and specialty coffees until about 1990 when they were acquired by traders working out of nearby Portland. At this point, many local residents decided that they no longer wanted their favorite cafes closed down by strangers for lack of variety or price difference between overseas brands and local options. As a result, over time some old favorite cafes reopened but with different names (e.g., The High Stakes Café) while others disappeared altogether (e.g., The Seth Low Cafe). Today there are still severalselective roasters operating out of Waterville including New England Roasters (NER), Blue Bottle Coffee (BC), Peet’s Coffee & Tea Workshops (PECW), First State Beans (FSB), Central Saint Martins Koffeeeworkshops (CSM), as well as numerous convenience stores selling fresh beans direct from participating roasters throughout central Maine!

Waterville is a town in Cumberland County, Maine, United States. The population was 1,898 at the 2010 census. It is part of the Portland-Vancouver-Houlton metropolitan area. The name "Waterville" likely originated from an Indian word meaning "place of safety." The first permanent settler in Waterville was David Humphreys, who arrived about 1772. He and his family built a log cabin on the bank of the Penobscot River. In 1824, Humphrey's son Isaac moved to Waterville from Bangor and started a small grocery store. In 1827, Isaac's brother Eli added another store to the business. By 1830, there were four stores in Waterville – one each for Isaac Humphreys, Eli Humphreys, John Gorman and John Fryer. In 1835–36, Abraham Bigelow opened a large warehouse at what is now Main Street and State Road 20A (later US Route 2). That year also saw the founding of Waterville Academy by Jeptha Chandler and others which continues to this day as one of Maine's premiere postsecondary institutions In 1840–41, Nathaniel Lloyd came to Waterville from New England with his wife Sarah Annandale Lloyd and their two children. They erected a wagon shop on Front Street near current Day Road before moving into larger buildings on Center Street in 1844 which became home to local government services until 1959 when it was absorbed into Portland city government
