The first recorded purchase of ground Coffee was made by King Philip II of Spain in 1516 AD. Over time, various methods for brewing Coffee were developed: wet-processing (using rainwater or vinegar), dry-processing (using heat or air pressure), and roasted Bean-to-Bag method (using roasted beans). The Wet-Processing Method: Wet processing refers to when Coffee is prepared using rainwater or vinegar which breaks down the bean's cell walls so that the nutrients can be absorbed into the bean cells; this causes a higher level of flavor extraction than with other methods. This method is often used for darker coffees such as Sumatran Asirian Robusta and Bali Sulawesi Sunrise.
