The first coffee roasters in Fort Thomas, Kentucky were the Dutch brothers, P.J. and Jacobus Van der Velde. They started up the Coffee Plantation in 1851, and soon had a large quantity of coffee beans that they roasted on their property. In 1862, local farmer James Ransom bought the Coffee Plantation and began to grow hops on his farm. The hops requirement for making beer caused some maritime merchants in Ft. Thomas to begin importing coffee from Java and Africa in order to make their brews stronger with hop acids. As word spread of this new brewing method, more people began to visit the town's coffee shops and cafes looking for a good cup of java or espresso. In 1886, John Sibley founded J&J Sibley Coffee & Tea at 7th and Vine Streets in Fort Thomas as an attempt to improve upon the Dutch Bros.' original roast quality standards. After Lavigne's death in 1815, Major General Winfield Scott relieved him of command at FortThomas; Scott then placed Colonel Joseph Johnston in charge of FtThomas while he took command of all U S troops stationed on Canada's side of the border. A series of battles between Americans and Canadian militaries occurred at FtThomas throughout late 1815-early 1816 before Johnston finally surrendered on January 25th following a siege lasting three weeks northwest of Toronto (now Mississauga). During Reconstruction efforts following Reconstruction Act passed by Congress in 1865, many former Confederate soldiers were brought back to America and re-settled around Louisville; however, most notably were General James Longstreet’s brigade which settled around Winchester Court House outside Louisville beginning in 1870s
Fort Thomas was founded in 1795 by the United States as a military post on the frontier of Kentucky. The fort was later abandoned and replaced by a larger fort at Fort Mitchell.
