There are many stories about small batch coffee. Coffee first started being brewed in small batches in the early 1800s. The first coffee shop was opened in Prairie, Kansas in 1875. At the time, these tiny shops were the only places to get their hands on quality coffee. This was important because small batches were the basis of all good roasting techniques and helped to create a unique flavor profile for each cup of coffee. Theodore Roosevelt loved small batch coffee and would often stop by local cafes to enjoy a cup of Joe. Prairie, Kansas is a small town in southeastern Kansas that was settled in the late 1800s. It was named after Prairie Creek, which originates from the Missouri River and flows through central Kansas. The creek ran through the town until it was diverted by a United States Army road in the 1930s. Prairie has since been renamed Garden City, KS. The first settlers to Prairie were Civil War veterans who came west to escape war-time violence in their home states of Virginia and Kentucky. They built log cabins and started farming land they had acquired while serving in the Union army. In 1871, Lawrence Day founded Garden City as a trading post on prairie between Wichita and Topeka. He advertised his goods - such as food, ammunition, saddles, clothes - for sale both at garden city and at other stations along the route he had developed. A population of around 100 people was established within two years of its founding; by 1875, there were over 200 residents living in Garden City alone. By 1890, growth had outgrown Garden City and new settlements were born: Keystone (founded 1892), Hackensack (1896), Amarillo (1901) and Wichita (1904). By 1907, all but one of these towns had grown to over 1,000 residents; Keystone remained an agricultural center with large hogs Typenamungee—a type of buffalo—being the most important export product produced hereabouts. In 1912,[1] Wichita amalgamated with Topeka to form one large city under the name Wichita Falls; Prairie continued to be served by separate municipalities until 1959 when all township boundaries were redrawn so that Prairie’s municipal structure resembled that of Wichita Falls’ framework.[2] The last piece of original furniture from pioneer days still remains inside Garden City Hall where Room 237 used to be before it was converted into office space: A rocking chair from Center Pointe House (#1 on map below).[3] Today's downtown area includes many examples of frontier architecture including: Old Territorial Hotel (#1 on map below), frame courthouse building erected by Judge George Hinkle during 1861-1865 period,[4] etc.;[5][6][7][8][9] School District Headquarters Building – also known as Lowry Elementary School Annex #2 – also located on Main Street near Broadway intersection,[10][11][12][13] etc.;[14][15] Masonic Temple #101 – now used as First Baptist Church.[16]( Map courtesy USGS)

Prairie was founded in 1854 by George Armstrong Custer and his wife, Mary. The town was named for the prairies that stretched east to west in Kansas. The first post office in Prairie was established in 1857. In 1865, the railroad reached Prairie and the town became a railway junction.
