The first coffee beans were roasted on a small farm in Prairie, Kansas in 1912. The beans were grown by John Wesley Hardesty and his wife Mrs. Anna Hardesty. They roasted the beans for their own use and sold them to other farmers near Wichita. In 1916, the Beans Roastery was founded in Wichita by Harry and Jane Goodyear. They roasted the beans for export to Europe. The Beans Roastery was closed in 1980, but some of their coffee still remains in storage today at the University of Arkansas at Fort Worth (UAF). In 1960, the Café Don Bosco opened up in Prairie with a roast shop next door. It became the first café to offer drip coffee service. The café continued to offer drip coffee until it closed down in 1984. In 1990, Prairie resident Rick Wessels started a small business called Java Junction Coffee located on Main Street that served pre-packaged Japanese-made coffee pods as well as fresh roasts of all types of coffees from around the world sourced directly from satellite truckloads delivered right to his store! Java Junction Coffee continued operations until its closure in 2001 after many years of providing quality caffeine fodder for locals and visitors alike!

Prairie is a small town in Clay County, Kansas, United States. The population was 805 at the 2010 census. Prairie is part of the Topeka, KS Metropolitan Statistical Area. The name "Prairie" comes from the Sioux word for "plain." The first settlers in Prairie were white men who came to Kansas Territory in 1854 as part of the Nebraska Land Rush. They were looking for land that would support their growing families and provide them with enough food to survive. One group of these men named themselves the Prairie Independent Company and started farming what is now Prairie. They rented out land to other people and sold goods they produced such as wheat, oats, corn, dairy products, butter, eggs, and meat. In 1875, a group of Norwegian-American farmers arrived in Wichita County and began farming what is now Prairie. These farmers had been working on their farms since they emigrated to America in earlier generations. They brought with them many skills that helped make their farmsteads successful: irrigation systems, livestock grazing areas, good soil fertility (due to its location near water), and a deep well system that allowed them to produce large crops without having to get groundwater up close. In 1907-08*, one of these Norwegian-American farmers named Ole Bakken donated over 1 million acres (40 km2) of prairies along the Missouri River west of Wichita County for public use as an agricultural reservation known as Great West Farms*. This donation marked the beginning of prairie's growth as a rural community.*
