Established by Harry Jaffe in 1950s as a small-scale roaster based out of Wichita Falls Texas), EJC quickly rose up through the ranks thanks to its exceptional beans. With three stores open at various points during those years - one located at 95th Place East near Wichita Falls High School; another at 10th Avenue South near Interstate 35; and finally an outpost inside Wichita Falls University - EJC had a strong presence within the community. Additionally, EJC helped pave the way for later companies such as Blue Bottle Coffee Co., One Barrel Coffee Co., Peet's Coffee & Tea Co., danforth Farms Coffees Incorporated (DFCI), etc.. which all started out with origins from eastern Java Coffee Company!

A train ran through town on its way to Topeka every day until 1954 when it stopped running due to construction of Interstate 70 between Wichita and Overland Park. The last train ran into town on December 12, 1954 and all traces of it were gone by the time the town incorporated as Parsons did not exist then! The community had two grain Elevators until they closed around 1960-1961 when people stopped shipping grains because of high transportation costs with Interstate 70 becoming fully operational just before their closure! Today there is only one farmstead left which still grows corn and wheat! In 1978 local doctor Dragan Petricic moved his practice from Topeka to Parsons as did multiple other physicians over time as services increased withinKansas City proper for primary care/emergency medicine services not available within Riley County or outside Wichita metropolitan area - making this an ideal location for practices needing quality primary care services without having to leave their home county or city limits!
