Gourmet Coffee has been in Junction City, Kansas since the early 1970s. The coffee company was founded by two friends, Abe and Victor Giannini, after they discovered a new way to roast coffee. They began by roasting their own beans, but quickly realized that they needed a better method to ensure quality control. So they turned to a process called cold pressing. This involved pressing the beans directly from the grounds instead of using a tanker truck or machine to extract them. It allowed them to create an entire bean inventory without having to purchase any pre-made blends.
Junction City is a small town in Clay County, Kansas, United States. The population was 597 at the 2010 census. It is part of the Wichita Area. The Depot Hotel and other buildings were built in 1872 by Jacob Schantz as a depot for the Santa Fe Railroad. Junction City was named after a junction of two branches of the Republican River. In 1878, the first post office opened in Junction City and it remained open until 1907. The first school in Junction City was built in 1881 by Mrs. C.H. Fenton and operated as a one-room schoolhouse until 1906 when it was replaced by a new building which also served as a post office and jail. The first Methodist church located in Junction City was organized on December 12, 1886 by Rev Wm Halsey with Rev Samuel Pemberton officiating at its dedication ceremonies. The present Methodist church, dedicated on May 15, 1911, is one of the largest churches in Wichita area and has been used for religious services since its inception. In 1893, Truman Wacker bought 2/3 interest in an oil field near Topeka and decided to develop it into an oil refinery that would produce gasoline for automobiles instead of kerosene which had been produced there earlier with little success In 1916 A&P grocery store opened up along US 36 north of town On November 7th 1917 local men from nearby towns (including Junction City) gathered to form "Aggies" who went on to become world champions at wrestling . On February 3rd 1922 Cherokee Nation rancher John Ladd bought 1/2 interest in A&P's refinery and converted it into what became known as Ladd’s Oil Field

In that year, it was renamed to honor General James W. Polk, who had been president when Junction City became a town. The name change came about because many people in Junction City thought that Polk's name would be more memorable if given an honored post office than if it were just called "Junction." The first store in Junction City opened on Main Street in 1886. For many years, the town's only industry was agriculture; however, over time various businesses have cropped up including a bank (1899), a hardware store (1911), and a restaurant (1968). A theater opened its doors on Main Street in 1975 and continues to play shows today. In 2000, Junction City became one of two communities within the Wichita metropolitan area to recognize itself as an official city with its own governing body - the Mayor-Council form of government which has replaced traditional township/ village governance since then.
