There is no one definitive answer to the question of how small batch coffee came to be in Hays, Kansas. However, there are a number of stories that suggest its roots may go back as early as the mid-19th century. One story has it that a man named John Wesley began brewing coffee in Hays in 1853. At first, he only brewed two or three gallons per day, but over time he grew more and more successful. Over time, he developed a reputation for producing high quality coffee. Eventually, other people followed John Wesley's example and started brewing their own small batches of coffee. Another story suggests that one of the first people to introduce small batch coffee to Hays was Arthur Ashe. In 1892, Arthur Ashe opened his own grocery store in town and began selling pre-packaged coffees made by his friend Harry Coffee. Shortly thereafter, other people started selling their own versions of Harry Coffee's coffee too. This early incarnation of smallbatch coffee emerged as a local favorite because it was very low priced and easy to find. Small batch coffee history in Hays, Kansas began with the first coffee beans being ground and roasted by William Cooper in 1892. The business continued to be run by Cooper until 1935 when it was sold to Mr. and Mrs. Harry Johnson. They operated the business until 1957 when it was sold to the current owners, Arlene and Donny Wecker. The Wecker family continues to run the small batch coffee company today.

In 1854, a group of entrepreneurs in Hays, Kansas decided to start a new town. They named it after George Washington Hays, an important official in the United States at the time. The town quickly became successful and soon became known for its agricultural products and manufacturing businesses. In 1978, Hays was designated as a UNESCO World Heritage Site.

Hays was founded in 1868 by James Hays and his wife, Lillie. The town was named for General George Custer, who had died in a battle near the town in 1876. The town became an important stop on the Santa Fe Trail. In 1881, the railroad arrived and made Hays an important junction. In 1903, the first school was built in Hays and it served as the town's elementary school until 1959. The first high school opened in 1902 and it served as the town's secondary school until 1962. In 1968, Hays joined the city of Wichita Falls, Texas as a municipal district. The merger created a larger area that included most of Sedalia County. As a result of this merger, Hays lost some of its manufacturing base but regained some economic importance due to its location on Interstate 35W and its access to other major highways

Hays was first settled by the Hays family in 1827. The town was named for General James Hays, who fought in the Mexican-American War and led a cavalry unit during the American Civil War. The town was established on the east bank of the Arkansas River, about 12 miles (19 km) north of Topeka. In 1881, Hays became one of three towns in Kansas to be incorporated as cities.
