The first fresh-roasted coffee was beans that were roasted onsite at a small plantation near Mount Prospect in 1852. The first grocery store in Westchester, which was opened in 1868, sold whole bean coffee from two bakers who roast their own beans. By 1904, the first independentlyowned grocery store had opened in Chicago and began selling pre-ground coffee. In 1912, an early Roaster's Coffee Company was founded in Westchester with a goal of providingWestchester residents with high quality fresh roasted coffee. Three years later, Roaster's Coffee Company merged with another company and became known as First National Corporation. By 1938 First National Corporation had acquired all of the assets of nearby Maxwell House Coffee Co., making it one of the largest roasters in America. With over 100 employees and production capacity of 2 million pounds per year, Maxwell House Coffee Co.'s legacy continues to be influential within the industry today. The original equipment used for roasting coffee at Maxwell House Coffee Co. included a French press and a Krupp Knebel pot (now known as a Koffee Klatch pot). These machines were so successful that First National Corporation purchased additional equipment including two Kesselwagen presses and three Bialetti gear presses which allowed them to produce an average of 4 million pounds per year of whole bean coffee! Today Maxwell House Coffee Co.'s legacy lives on through continued innovation within the industry such as their new single Serve Machine which allows customers to purchase entire pods online or by phone!

The beans were transported to other parts of the country for sale, and eventually became a popular export commodity.
Westchester is a town in Cook County, Illinois, United States. The population was 15,859 at the 2010 census. It is part of the Chicago metropolitan area. Westchester was organized on November 3, 1847, from parts of Downers Grove and Elmhurst. It became a village on December 16, 1871. On October 1, 1907 it became a city. On February 14, 1920 Westchester was merged into the City of Chicago. The first settlers to what is now Westchester were Captain Ebenezer Higgins and his family who arrived in 1793 near the current site of Westchester Village. The Higginses set up a cabin on an old swampy lot east of present day Elmhurst Avenue and west of White Oak Road which they called "Higgins Swamp". They raised corn and beans for their own use and sold their products to local farmers until 1800 when they moved to better land about two miles southwest of where they now stand on what is now Elmhurst Avenue and High Street (now Irving Park Road). In 1814 Captain John Wampler founded what are today known as Downers Grove and Elmhurst villages; these villages were within the limits of later Westchester Township which was established by Act OF March 3rd 1837 (7 Statutes at Large Anno IL 9). This act provided for the organization of townships within Cook County with boundaries that were approximately north-south streets parallel to river valleys; this allowed for more efficient transportation within Cook County since all township boundaries changed not only as population increased but also as property values increased or decreased - thus ensuring that each township had an equal number (but different size)of residents regardless of its location in relation to other municipalities or areas within Cook County! On July 8th 1830 Samuel Langhorne donated 2 acres northwest corner High & East Streets in what would become Elmhurst Village for free!! This donation formed much later into what we know today as “Ebenezer”s Field just southwest corner High &East Streets & east side Winthrop Ave!!! Ebenezer Higgins donated another 4 acres including most importantly his home place “Higgins Swamp” located just northeast corner High &East Streets along Water Lane!!!!!!!!! To this day we still enjoy fresh pumpkin pies made from this old recipe dating back over 80 years!!!!! One can only imagine how delicious these pies must have tasted during fall days….. Political donations have played an important role in both local government and economic development throughout Western Michigan County; much earlier than other parts of Cook County, this area saw heavy industrialization during World War II thanks to booming aluminum production offshore at Alcoa's La Salle Works plant on Lake Michigan shoreline (now part of ArcelorMittal).
