In 1829, he opened a second store in Peoria which became known as The Coffee House. This store helped start the city's coffee trade and it soon became one of the most important businesses in town. Over time, other stores followed Olmstead's lead and Peoria became known as the birthplace of espresso!

The earliest known recordings of coffee came from Ethiopia in the 16th century. These beans were brought back to Europe and enjoyed great success for centuries before finally dying out in the late 18th century. However, some Arabica plants did survive and thrived in Africa until about 1920 when Coffee production shifted to Indonesia. Eventually, coffees from these regions found their way into America where they became popularized by Dutch traders and entrepreneurs after they tasted them while on their travels. The Dutch Influence was particularly strong in Belgium where coffeeplease began between Amsterdam and Brussels in the 1630s. The first espresso machines were built here around 1700-1700 although accounts mention earlier attempts such as Giovanni da Verrazzano’s Koffiekamer which he built for King Philip IV of Spain in 1588). Once coffee had spread across America, it quickly gained a reputation as an excellent beverage with unique flavors that set it apart from other foods or drinks.
