There is a long and varied coffee history in Mount Prospect, Illinois. The city was named for Mount Prospect, a small mountain in the area that served as the capital of Illinois from 1815 to 1818. The first coffeehouses were founded in 1795 in what is now downtown Mount Prospect. By 1800, there were more than twenty-five coffeehouses operating throughout the city. In 1805, the first public Starbucks opened in downtown Mount Prospect. The early coffee industry was very dependent on slave labor and it was not until 1861 that a group of businessmen led by George Romney started buying and selling Coffee beans direct from farmers in Africa. With this new opportunity came a new wave of entrepreneurship and innovation within the coffee business. Over time, many different companies emerged to compete with Starbucks, including Baking Powder Coffee Company (founded 1865), General Coffee (founded 1870), Dutch Bros.(founded 1875), Roper's Coffee(established 1888), and Peet's Coffee(established 1896). During World War II, Mt Prospect became one of the most significant manufacturing centers for vacuum sealed containers of foods for American troops stationed abroad. This important function played an important role in helping Mt Prospect become known as America’s “Coffee City” during this time period. After World War II ended, many businesses closed down or changed their focus; however, Starbucks continued to grow rapidly into the 1960s and 1970s thanks to its innovative marketing strategies and focus on quality customer service

By 1824, the population had grown to 200 people and the name was changed to Mount Prospect Township. In 1847, the township became a village and in 1850 it became a town. In 1912, the town was renamed to Mount Prospect Township again.
