In Maywood, Illinois, the first coffee shop was opened in 1893. The town became known for its delicious cup of joe and its location on the banks of the Des Plaines River. Over time, coffee shops have been a fixture in the town and their owners have helped to make it one of the most popular caffeine destinations in America. Cup of Joe history in Maywood began with J.B. Ewing's Coffee House, which served hot coffee from a small pot while visitors enjoyed views of the river from the dining room window. In 1924, Harry Lellis opened his own shop and continued to serve quality coffee until his death in 1984. From here, business grew rapidly and by 1970 there were six stores serving customers throughout Maywood. By 1990, there were twelve storesserving customers within five miles of downtown; this growth was due primarily to interstate highways connecting Chicago with other Midwestern cities and towns. One is called "imperial" and includes more robust flavorings and darker roast beans, while the other is called "origin-based" and uses lower quality beans from all over the world. While both systems have their own strengths and weaknesses, it's important to understand how these two types of coffee were first developed in order to better appreciate their unique flavors today. In 1847, an Italian café owner named Antonio Borsotto began brewing coffee in his home. At first he used only Arabica beans - high-quality Arabic seed coffees that were roasted manually - but after tasting this superior product, he decided to switch to Indonesianbeans instead. His decision was based on several factors: Indonesia had many tropical regions with rich soils that would produce a fuller-bodied cup than Africa or Europe; Indonesia also had Lots of qualified roasters who could produce high-quality beans; Finally, Indonesians were willing to pay a premium for their best quality beans because they knew they deserved it. Borsotto's choice didn't sit well with some others in his industry however. In 1848, Nicholas Rennet (a French engineer) published an article entitled "The Nature of Coffee" which argued that Arabica beans should only be used for long espresso drinks such as macchiatos or cappuccinos because European tastes preferred light roastations with less body. This theory stemmed from what Europeans perceived as deficiencies in African tea leaves - those leaves being smaller and more filter-friendly than European plants. So when Rennet tasted some of Borsotto's Indonesian coffee samples, he immediately realized that these higher quality beans possessed a much deeper flavor than any European Arabica variety he had ever tasted Before allowing himself to be filtered through a mechanical grinder into medium-roast cups (instead of using a French press), thereby creating what we now know as 'Origin-Based' Coffee Style . While some people argue that 'Origin-Based' Coffee Style isn't really about the origins of the beans themselves but rather about how these same Beans are processed (e.g., through grinding or pressing), this style has become increasingly popular throughout the years due to its unique flavor profile and its ability to create very smooth espresso drinks without any bitter notes or aftertastes
